I have a friend, who is a girl. I like her a LOT! Recently I asked her 'would you like to go out for lunch'? she said yes, and I added that 'I'm paying'. She giggled and said 'sure, but I'll pay next week' (she wants to go out again next week).

Now does that constitute as a 'date'? I'm taking her out to lunch (can't do dinner due to both of us being busy).

How can I convey that I am asking her out as more than a friend?

Take it easy...yes, it does constitute a "date" but in the least formal terms possible, and that's a good thing. She's already open to having lunch with you a second time, so all you have to do is not do something stupid to mess that up and you've got it made. The main thing is, don't move too erratically and scare her off...enjoy her company and give her time to enjoy yours without getting into any heavy topics.

No need at this point. She'll get the message soon enough. Remember to make good eye contact (turns women on) and be interested in what she has to say. A sweet hug at the end of the day should send the message. In this day and age, it's okay if she wants to pay next week. It will sort itself out in the days to come. Meantime, enjoy her company.

Its obvious that your interested, she knows that already. Maybe she might be unsure. Try holding her hand when you guys go out on your next date. Then try kissing her in a romantic way. You might steal her heart. Who knows? She might end up being your girlfriend some day.

Good Luck!

Honestly I cannot tell whether she thinks it's a date or not but from your words of her giggling and jokin around about going out again with you I highly doubt that she sees it "just a hang out"!
Good luck!
