*Grate the dudhi {1cup } and fry it in a little ghee { 2- 3 tbsp.} till the water evaporates.!!!!
Then add 2 - 3 tbsp of milk powder [substitute for mava]..... & let cook till its tender !!!
Add double the quantity of milk {2cups} and half the qty of sugar {3/4 cup} and let cook till all the milk evaporates !!!!
Serve, garnished with chopped nuts and raisins !!!!

Of course. No book or website suggestion. This is an old and famous recipe.And no need to add mawa. Milk will do. Grate the gourd and cook it in a pan.Add milk and sugar to it. Keep heating till it becomes soft.

1 kg doodhi, 1 1/2 liters milk, 400-500 gms sugar, cardamom powder, saffron (a few flakes), 1 tblspoon ghee
Peel and grate Dudhi. Put milk and dudhi in a heavy saucepan. Boil till thick, stirring occassionally. Once it starts thickening, stir continuously. Add sugar and cook further till thickens. Add ghee, elaichi, saffron and colour. Stir on low heat till the mixture collects in a soft ball or the ghee oozes out. Serve hot, decorated with a chopped almond or pista.

Halwa with egg
Peel dudi and grate only the green( exclude white of inside) two will fetch you 4-5 cups
Add ghee and start frying grated dudi untill its cooked and oil separates just like gazar ka halwa, Add one cup high fat milk cook again then add sugar crushed cardamon, few strands of saffron (optional)
Add two beaten agg,let it cook for another 20 mins.
keep stirring untill its dry
We do it with beetroot, and gazar too
Traditional dudi halwa Hyderabadi style is done with Koya

milk- 1-1 1/2 litre

elaichi- to taste(4-5 piece)
ghee- for boiling
kesar-to taste
almond -pista pieces to decorate
method-
take a vessel put ghee in it add milk n sugar n dudhi n kesar petals in it n stir itwell.
keep stiring till becomes thick like rabdi.
now remove it from vessel
n decorate it with almond n pista pieces n serve hot
