Its cold and windy and pouring rain- winter here is Oz!
I need comfort food, but my brain is frazzled (Ive got a 9 week old baby- sleep deprivation big time!) and I cant think of anything.

cheesy potato soup serves 2

INGREDIENTS
1 tablespoon and 1 teaspoon unsalted butter
1/3 cup chopped onions
1/3 cup chopped celery
3/4 cup and 2 tablespoons and 1 teaspoon water
1-3/4 potatoes, peeled and cubed
3-1/4 slices American cheese - broken into pieces
2-3/4 teaspoons all-purpose flour
1/2 cup and 1 teaspoon milk
1-1/4 teaspoons chopped fresh parsley

DIRECTIONS
Melt the butter in a large pot over medium heat. Saute the onions and celery in the butter for 5 to 10 minutes, or until tender.
Stir in the water and potatoes, bring to a boil and then simmer until the potatoes are tender. Add the cheese and stir until melted.
In a separate small bowl, combine the flour and the milk and stir well until the flour is mostly dissolved. Pour this into the soup slowly, stirring constantly, until soup has thickened, about 5 minutes. Garnish with the parsley

Pasta Salad:
any kind of sliced meat or shrimp
pasta
green belly pepper
sliced tomatoes
sliced onions
sliced mushrooms
cook the meat with the onion, then add the rest of the veggies.
Add all the cooked ingredients to cooked pasta and add salt, pepper, dried oregano

chicken pot pie
chili and cornbread
spaghetti or lasagna with garlic bread...best thing about these choices,is that you don't have to slave over a stove. I'm sure that you can probably get some great take-out, close to home. Mama needs a break sometimes. Congrats on your new addition to the family:)

For the cold weather a stew or curry would be ideal. Its easy and quick as well. Just throw some chopped veggies of your choice and some stewing meat into a pot with spices and let it simmer. Eat with rice, bread, potatoes or just as is.

try cowboy stew/ easy and good/
take pound hamburger meat-
brown meat
also you can add beef tips to it if you want.
brown this in lea n perins whorst sauce
drain 2 cans whol kernnel corn
chop 2 green bell peppers
one large onion
get 2 cans tomatoes with geen peppers and onion in it (you have to look for these)
mix all of this together in ;your crock pot and in couple of hours the smell will be awesome.
the mixture will make its own juice
