i buy budding dried beef be carefull not to get corned beef ,,get the one that says beef
chop it up and add butter to the skillet 3 tlb,and 3 tlb flour and the beef then add 2 cups of milk and wisk it well let it cook and add milk as you go if its to thick if not thick enough just mix flour with 1 tlb butter and wisk it in salt and pepper to taste



if you want the hamburger kind make it the same way

REAL SOAS is the bottled dried beef (sometimes called "chipped beef") stirred into a white gravy and served over toast. To make the white gravy:

For each cup of gravy melt 2 tablespoons of butter over medium heat.
Add 2 tablespoons of flour.
Cook until the flour turns slightly brown.
Slowly add one cup of milk, stirring constantly.
Continue to stir constantly until the gravy comes to a boil.
Reduce heat to low and simmer for 2-3 minutes until the gravy begins to thicken, stirring occasionally.
Salt and pepper (Preferably freshly ground) to taste.
Stir in the chipped beef.
Heat until piping hot and serve over buttered toast.

I don't really like it but my mom always made it using a package of "chipped beef" or maybe "dried chipped beef" from the store. You can find it in the area where the hot dogs are. As far as I know, the recipe is on the package. She just called it "chipped beef", not SOAS. I've also heard it called "creamed chipped beef".

If you want what we got in the Navy, here it is.

The original recipe (right out of the Navy cook book) served 100.
It's been cut down to six servings here: (BETTER KNOWN AS RED SOS) MINCED BEEF

Ingredients
2 Lbs beef, ground
1/2 cup onions, dry, chopped
1/2 cup flour, all purpose
18 ozs tomatoes, canned, crushed
1 tsp nutmeg (or mace)
1/2 tsp salt
1/2 tsp pepper

Directions
Cook beef in its own fat with onions until beef loses its pink
color, stirring to break apart. Drain off excess fat. Sprinkle flour over beef; continue cooking until flour is absorbed.
Add tomatoes, nutmeg (or mace), salt, and pepper. Stir to mix well. Simmer 10 to 15 minutes. (add water if needed).

This is normally served over hot buttered toast points.

I've only known this as SOS. Your you know what on a shingle. Chipped beef CAN be replaced with ground beef if need be.

That is so funny. That is what my grandparents called it. We usually browned some ground beef in a skillet, drain, then you add homemade butter gravy. yummmy! or you can use brown gravy, then get some bread and crumble it up and eat it.

Here's my recipe.
S.O.S (Sh*t on the Shingle)
4 tbsp. butter
4 tbsp. flour or cornstarch (I prefer cornstarch)
4 cups of milk
black pepper to taste
8 oz jar of dried beef- cut into pieces (Very important: RINSE IN WARM WATER and drain, takes away the saltiness)
1/2 pound of hamburger cooked and drained (optional)
Melt butter in large skillet over low heat. Whisk in flour to form a roux. Whisk in milk, a little at a time, increase heat to med-high and cook stirring, until thickened. Stir in chipped beef , hamburger (optional) and seasoning, heat through and serve over toast or rice or even a baked potato.

Creamed Chipped Beef
Ingredients

1- 2.25 oz. pkg. ARMOUR® STAR SLICED DRIED BEEF
1 T. butter margarine
1 T. CREAM Corn Starch
1 cup milk
¼ tsp. Worcestershire sauce
Separate and rinse ARMOUR® STAR Sliced Dried Beef under warm water for 15 seconds. Cut beef into bite size pieces. In a saucepan, melt butter over low heat. In a separate bowl, combine milk and CREAM Corn Starch until smooth. Add milk mixture to saucepan and cook, stirring constantly over low heat until thickened. Simmer for two minutes, stirring constantly. Add Worcestershire sauce and ARMOUR® STAR Sliced Dried Beef. Season with salt and pepper. Serve immediately over toast, prepared rice, noodles or even pastry shells for breakfast, lunch or dinner.
