I grew it myself. I am sick of eating mushrooms and neglected it. Now it's huge and telling me to use it.

I don't eat meat. Hey, drying it sounds like a good idea. I wish I new someone to give it to. I meant to give it to a friend over the weekend but forgot to take it.

I have decided to dry it out. It's in the dryer now.

lol. You could eat it on a bun like a burger, with melted cheese.
You could grill it? Is it a tough mushroom or a soft one?
Or you could chop it up, and saute it in butter and garlic. Serve over steak.
You could dry it, and grind the dried mushroom. And use in anything..

Bolognese Mushrooms- a family recipe submitted by Tracy Barber
Serves 4-6
Ingredients:

1 large flat mushroom per person
1lb (454g) lean minced beef (vegetarians could use soya mince)
1 small red pepper, finely diced
1small green pepper, finely diced
1 small onion, finely diced
1 garlic glove, crushed
1 jar pasta sauce of your choice (chunky vegetable, garlic & mushroom etc)
Good pinch of dried parsley
Knob of garlic butter per person
Grated Mozzarella cheese

De-stalk the mushrooms and pop under a medium grill for around 10 minutes.

Meanwhile, quickly fry the mince in a little oil until browned. Add the diced peppers & onion & fry for further couple of minutes. Pour in the jar of pasta sauce and add the crushed garlic & the parsley. Simmer for around 5 minutes. Make sure the mixture is not too runny. You want quite a thick mixture.

Take the mushrooms from under the grill and top each one with a generous helping of the bolognese mixture. Pop a knob of garlic butter on the top of each mushroom. Sprinkle generously with grated Mozzarella cheese and place under a HOT grill until the cheese has all melted and is slightly browned.

Serve with steaks, chicken etc or serve as a starter.

No meat- but you did not say if you eat eggs- if the mushroom is a tough one, suatee it in butter or oil with some onions and rosemary- and make an omelette. Yummy!

Mix some olive oil, minced garlic and chopped herbs -- rosemary and thyme are good, but oregano or basil would work too. Brush the mushroom cap with it on both sides, going heavier on the side with the gills, and broil it. Then chop it up, mix with some olive oil, wine vinegar, salt and pepper and toss with some hot pasta.

Stuff it.

Scallops, Shrimp, shredded Parmesan cheese, butter, bread crumbs.

Anything you crave.

I am so jealous of that mushroom. I never thought to grow them in my garden. Maybe I will give it a shot next year.
