Eat the whole pie the first day.

I worked in a bakery for many years. We found that pouring the hot pudding into the shell and then letting it cool, then slicing the bananas on top of the cooled pudding slowed the browning of the bananas. Immediately cover with whipped cream after slicing the bananas.

It is the nature of bananas to turn brown, but the heat of the pudding hastens it. Besides just one day old pie isn't bad. It's the third or fourth day that it needs to be thrown.

Too bad that bakery is no longer open. After the owner died others tried, but no one could make a go of it. Those cream pies were the BEST!!!

After you cut your bananas, squeez some lemon juice on them. then put them in your pie.

Before putting them in the pie, sprinkle them with lemon juice. It preserves them.

Sprinkle a little lemon juice on top to help stop the oxidation process.
