When you installed it you were given the option of files to open by default with Open Office. If you turned on all the office file types they should all open automatically on a double-click. Try re-installing, this time watch the options.

The new Office 2007 default files are XML files (or something like that) and OpenOffice does not yet have any import filters that will read them.

The new files all have new extensions (like xlsx for Excel instead of xls). Older version of Office can not read them either, you need a free viewer from MS.

If you are using Office 2007 and need to share files with other users, then save your documents as an older version, not the default. Then OpenOffice can read them fine.

Just remember "Save as..."
