If they were born in America they are American, born in Mexico then they are Mexican, England - English etc. simple. Look on the Birth certificate that was issued them when they were adopted and see where they were born.

Beyond the basics (Hispanic, Non-Hispanic white, Asian, *****) you probably don't, if the adoption papers are sealed. If they are not sealed, ask the parents.

You can spend $300 or so for a DNA test, which will give you a rough idea.

Gee, the obvious answer is: DNA test, as from www.familytreedna.com or similar site.
Even if their parents are known, it is amazing what percentage of people know almost nothing about their family tree.
