Marinate it in the same stuff they do, then cook over a hickory wood barbecue grill.

I am a former chef and have worked with steakhouse operations, a marinate as stated by the first respondant said, or a dry rub and let it sit in the frig for a few hours, or overnight.

For flavour issues it all comes down to not over cooking it, I am not sure how you like your steak done, but if you cook it over medium it can be dry and a bit tasteless, if you can get it cut into a medallion form, a slice of bacon like a filet mignon does improve the flavour.

Here in Canada the stores sell a sirloin medallion, a small piece of center cut sirloins steak with a netting to keep it together, and tri-tip is a cut this is coming from.

It is fantastic, especially the fresh baked bread and the peanuts on the floor.

I've never eaten there, but I've asked at other restaurants and been told that they get their meat in already in a marinade, and it's proprietary - meaning they won't tell you what's in it, sort of a trade secret.
