Well, an alfredo could be a type of white sauce, I suppose... if a restaurant offers "white or red sauce" on pasta, I'd have to ask them to clarify each one.

But generally, a white sauce is made using butter, flour, and milk.

An alfredo sauce is made using butter, heavy cream, and parmesan cheese.

White sauce is a general base sauce made with flour, butter, and milk- used as a base for gravies, cheese sauces, cream sauce or soup, etc.
Basic White Sauce
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
Salt and pepper to taste
1 cup milk

1.In a saucepan over medium heat, melt butter. Whisk in the flour, salt and pepper until smooth.
Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Use immediately or refrigerate.



Alfredo sauce is a sauce made by reducing cream and butter and adding cheese- no flour used to thicken:
1 pint of Heavy Cream
1 stick of butter
2 Tbsp. Cream Cheese
1/2 - 3/4 C. Parmesan cheese
1 tsp. Garlic powder

In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and Garlic powder. Simmer this for 15 - 20 minutes on low. You may wish to season with a little salt and pepper.

Here is a recipe for Alfredo sauce:
1/2 cup cream cheese
1 cup milk 0-2 %
3 tbsp freshly grated Parmesan cheese
1 clove of garlic
1 tbsp pepper
1/2 tsp salt
3 tbsp dry parsley/ 1/2 cup fresh

The best way to make this consistent is to use a blender, put cream cheese, milk, Parmesan, cheese, garlic, pepper and salt in blender. Blend until there are no clumps, poor into sauce pan on medium heat, cook for about 10 minutes, well cooking add parsley, is fresh chop finely and extra for garnish.

Here is a recipe for basic white sauce:
In a small, heavy saucepan, melt 2 tablespoons of butter over low heat.
Blend 2 tablespoons of flour into the melted butter.
Add 1/4 teaspoon of salt.
Cook over low heat, stirring, for 4 to 5 minutes. Cooking for this length of time will minimize 'flour' taste.
Slowly add 1 cup of milk, stirring constantly.
Continue cooking slowly until smooth and thickened.
For thin white sauce, follow the instructions above, but use 1 tablespoon of butter and 1 tablespoon of flour. Thin white sauce is used in cream soups.
For thick white sauce, follow the instructions above, but use 3 tablespoons of butter and 3 tablespoons of flour. Thick white sauce is used in soufflés.
For heavy white sauce, follow the instructions above, but use 4 tablespoons of butter and 4 tablespoons of flour. Heavy white sauce is used as a binder for croquettes.


You will notice the big difference has to do with the seasonings and cheese.

Alfredo sauce typically has Paramesan cheese in it but often can use mozzerella or other white cheeses.....White sauce is usually more bland and often a gravy type mixture.

When you add good grated cheese to it you have Alfredo.
