Fajitas are yummy!! Just cut up strip of red, green and yellow peppers, onion and saute it all up in a frying pan and serve them inside tortilla shells and serve with salsa and sour cream.

How about a steak fajita
1 lb of cooked steak
1 large yellow onion, peeled and sliced
2 large bell peppers sliced lengthwise into half-inch wide strips
Add a teaspoon of olive oil to a hot pan. Add the steak, for a few minutes to heat. If pan starts to smoke too much, reduce the heat to medium high. We want the steak just warmed, not burned. Remove from pan.
Reduce the pan heat to medium high. Add a little more oil to the pan if necessary. Add the onions, bell peppers. Cook, stirring frequently, for 5 minutes, until the onions are slightly translucent.
Slice the meat against the grain into thin slices. If you slice the meat at a slanted angle, you will be able to get your slices pretty thin.
Serve immediately with shredded cheese, salsa, shredded iceberg lettuce, sour cream, guacamole and warm flour tortillas. (Hint for warming tortillas - put in microwave over a paper towel for 20 seconds on high heat.)

Season the beef with cumin, chili and oregano. Wrap in tortilla wrappers with shredded lettuce, tomatoes, onions, jalapeno and sour cream.
Beef stroganoff on fettucine
- 1 lb steak strips
2 tbsp olive oil or butter
3/4 Tbsp white onion
1/4 Tbsp minced garlic cloves
1 lb sliced mushrooms
salt and pepper to taste
1/4 tsp nutmeg
1/2 tsp basil
1/4 cup white wine
1 cup low-fat white yoghurt
freshly cooked fettucine
Heat oil or butter in pan. Saute garlic and onions. Add beef and mushrooms. Add seasonings, white wine and yoghurt. Heat but do not boil. Serve hot on freshly cooked fettucine.

Okay, no cheesesteak. Instead, how about beef stirfry with egg noodles and fresh vegetables, like peppers, broccoli, baby corn, zucchini, portabella mushroom slices, and to season, some onions, a little ground black pepper, a hint of salt, and a dusting of parsley flakes for a little bite.

A stir fry of some sort. Stir fry what ever kinds of veggies you like, then add the meat (thinly sliced) to heat it thru. You could have it alone or with rice or a thin type of noodle.

DEVILED STEAK STRIPS
1 1/2 lb. round steak
1/4 c. flour
1/2 onion, chopped
1 clove garlic, minced
3 tbsp. oil
1 1/2 c. water
1/2 c. tomato sauce
1 tbsp. vinegar
1 tsp. horseradish
1 tsp. prepared mustard
3/4 tsp. salt
1/4 tsp. pepper
Trim excess fat from meat. Cut meat into thin strips about 2 inches long; coat with flour. In skillet, brown meat, onion and garlic in oil. Stir in 1 cup of water and the tomato sauce, vinegar, horseradish, mustard, salt and pepper. Cover and simmer for 1 hour or until meat is tender...stir often or meat and sauce stick too much. Add remaining 1/2 cup of water as needed to prevent sauce becoming too thick. Serve over noodles or rice. Serves 4 to 5.
SAVORY CROCK POT PEPPER STEAK
2 lbs. beef round steak (about 1/2 inch thick)
1/4 c. flour
1/8 tsp. salt
1/8 tsp. pepper
1 med. onion, chopped
1 sm. clove garlic, minced
2 lg. green peppers, seeded and cut into 1/2 inch strips
1 (16 oz.) can whole tomatoes
1 tbsp. beef bouillon (granules)
1 tbsp. soy sauce
2 tsp. Worcestershire sauce
Cut steak into strips. Combine 1/4 cup flour, salt, and pepper; toss with steak strips to coat thoroughly. Put in crock pot with onion, garlic, and half of the green pepper strips; stir. Combine tomatoes with bouillon, soy sauce, and Worcestershire sauce. Pour into crock pot, moistening meat well. Cover and cook on low heat for 8 to 10 hours. One hour before serving, turn to high and stir in remaining green pepper strips. Serve over hot rice. Serves 8.
