In the south it's Fried Dill Pickle Chips (yes we will fry almost anything at least once) but these are actually very good. Served with a spicy ranch dipping sauce. Easy to make.
Drain some nice thick cut dill pickle slices
soak in egg wash (milk or buttermilk and a couple of eggs)
then dredge in all purpose flour seasoned with pepper, garlic, and if you like heat, some cayenne. Fry for about 3-4 minutes at 350. Then drain and serve..has the saltiness of the pickle so don't need to add any to flour or when done. Very good appetizer.

Fry sauce - The basic recipe: 1 part ketchup, 2 parts mayonnaise. Mix together until thoroughly blended. Used for dipping fries, put on hamburgers, etc.
Funeral Potatoes - an easy dish that you will find at a lot of funerals (and other gatherings: weddings, birthday parties)
Ingredients:
* 6-8 medium pre-cooked potatoes (or a 2-lb pkg of frozen hash browns)
* 1/4 cup diced onion
* 1 can (10 ¾ oz.) cream of chicken soup (or cream of celery)
* 1/2 soup can milk
* 1 cup sour cream
* salt and pepper to taste
* 3/4 cup crumbs*
* 3** tablespoons butter, melted
* 1 cup sharp cheddar cheese, grated
Directions:
Heat oven to 350 deg.
Thaw frozen potatoes or cook fresh potatoes and cut into cubes (skin on or peeled to taste).
Place potatoes in a greased 2-3 quart casserole dish or a 9x13 cake pan.
Saute onion in 1T of the butter and spread over potatoes.
Combine soup, milk, sour cream and salt and pepper to taste. For a creamier dish, add 2-3 tablespoons additional milk. Mix well. Spread sauce over potato/onion mixture.
Melt butter and combine with crumbs. Sprinkle crumbs over mixture.
Sprinkle cheese over mixture.
Bake uncovered at 325 deg F for 40 minutes or until hot and bubbly throughout.
This recipe serves approximately 8, and is often served with ham and green beans.
*Many things can be used for crumbs, such as corn flakes or Chex cereal, bread crumbs, French's fried onions, or potato chips)
**If using the French's fried onions, there is no need to saute them in butter, so you need only 1T of butter for the onions.
Jell-O Salad - Here's How:
1. Eat it straight up - nothing fancy - just as per the instructions on the box.
2. Substitute carbonated soda (such as Sprite) instead of water during preparation.
***3. Mix fresh or canned fruit (like pineapple) into liquid Jell-o and let set.
***4. Get really creative and add fresh vegetables such as carrot shavings or diced celery.
5. Mix in 1/2 cup of cream cheese. Sounds a little, well, different, but I'm told it's delicious.
Tip: When mixing with fruit or vegetables, choose complementary colors. For instance if adding celery, use lemon or lime Jell-O.
