Just so you know, no wheat includes no bread, no pasta and no Italian! Are you people trying to kill me????

Pizza Rice Pie Wheat Free Recipe
Ingredients:
2- 2/3 cup cooked rice
1/3 cup minced onion
2 eggs, beaten
2 tablespoons melted butter
1 (8 ounces) can tomato sauce
1/4 teaspoon oregano
1/4 teaspoon basil
1 cup shredded mozzarella cheese
Pizza toppings of choice
1/2 cup sliced stuffed olives


Directions:
Mix together rice, onion, eggs, and melted butter.

Line a 12 inch pizza pan with rice mixture and bake 12 minutes at 350-degrees, or until set.

Spread tomato sauce with cheese over rice crust. Sprinkle with spices and cheese. Add toppings and olives.

Bake at 350-degrees for 20-25 minutes.

After removing from oven, allow to stand a few minutes before serving.

Recipe makes four servings.

Here is a little italian and greek fusion.....

Tzazitki Sauce
Non fat yogurt, dannon is the best 32 oz container. Well drained, do this by taking paper towels and placing them into a fine mesh colander. Then pour the yogurt in, the longer you let this set, the better it will be.

5 cloves of garlic, more or less depending on your like, finely chopped.
Olive Oil
Juice and zest of one lemon
One cucumber peeled, seeded and finely choppe
Salt and pepper to taste
Mix all of these ingredients together and let set for about an hour before serving.
Serve with whole wheat pita, if allowed. This also goes great as a dip for meat. Recipe to follow.....

For the marinade in your blender or food processor, add 1/2 cup olive oil, juice and zest of one large lemon, 5 cloves of garlic, handful of fresh basil leaves, salt and pepper to taste. Blend this very well until garlic is finely chopped. Pour over your meat this is great for lamb, chicken or beef. The grill your meat, beef to taste.

Fried Feta
Take a large chunk of feta and slice longways into long rectangular wedges. Take one sheet of fphyllo dough and first roll twice around the feta, then fold the edges over and continue rolling. Fry in vegetable oil just until the phyllo dough is a golden brown. Let drain and serve with the yogurt sauce.

Cucumber Tomatoe salad

Cucumber peeled, seeded and sliced
Roma Tomato, sliced
One med onion, peeled and halved then sliced
Handful fresh basil. Take your basil leaves, lay one on top of the other and then roll. Then slice in thin slivers.
Balsamic Vinegar
Olive Oil
Salt and Pepper to taste
Either feta or mozzarella cheese, chunked (optional)
Mix together and serve.

Chicken Roast.
Roast in a preheated 180C (350F) for 25 minutes per lb, add 20minutes if it is stuffed.
If cooking covered or in an oven bag reduce time to 18 minutes per lb.
For a crisper skin (open bag) increase temperature to 200C (400F) for the last 10-15 minutes.
Allow to rest in a warm place for 10-15 minutes.


Chips.
2kg Large potatoes, peeled.
Vegetable oil for deep frying.
(I) Wash and thoroughly dry potatoes and cut lengthways into 10mm sticks.
(II) Heat oil and lower chips into the pot a few at a time into moderately hot oil. Cover and cook for about 4 minutes, or until pale golden.
(III) Remove and place on paper towels. Repeat with rest.
(IV) When ready to serve reheat oil, and cook again in batches, until crisp and golden. Drain on a paper towels.
Note.
Potatoes needn’t be in sticks and at the end of step 2 they can be stored refrigerated several hours ahead or wrapped and frozen.

If it is for a special dinner I would do a Rack of Lamb. Roasted with rosemary and thyme.
I would roast with the lamb quartered red potatoes seasoned with garlic salt and basil.
I would saute some asparagus and baby carrots. I would serve them tossed in olive oil and balsamic vinegar and topped with paprika for color.
If it is not for a special occasion I would go for hot dogs and beans. :)

Do you have a very fancy dinner plates and nice wine glasses? If you do, get some take out of your choice. Italian will be good and place them on your most fanciest plates. Serve with a nice wine. Perfect dinner with No mess.

salsbury steak (cubed steak ) browned in olive oil then topped with mushroom soup and a bit of water ,covered and put into the oven 350 for an hour
boiled potatoes with butter on them and green beans.

how about BBQ ribs that will melt in your mouth,baked beans that will make you slap someone, cole slaw to die for,and garlic bread like no other. topped of with a cold glass of sweet tea. desert,peach cobbler right out of the oven with a scoop of ice cream of your choice.

I will mainly be cooking you a nice dover sole - grilled with lemon and black pepper and a nice salad. Yum.
And then chocolate mousse, but only if you eat all of your fish.

I`d cook you a nice spanish omelette with sald and crusty bread, and get a nice bottle of red wine to accompany it.
