From my limited understanding when u hit someone with a bag of oranges they don't cause bruising to the outer body, only internally.

I don't know that it's true for everyone, but the force is spread out and yielding enough to not break surface vessels, but heavy enough to cause deep damage.

I saw a movie once where woman was working for a gangster and she screwed up and lost some of his money.
He punished her by walloping her with a bag of oranges for just that reason. She would have no bruises to show any one.

The name of the movie won't come to me right now, but I'll star the question and add it if my brain starts working.

For your actual question, the only thing I can think of is that they are soft and the impact would be spread out over a fair size area.

The bruising in an apple is caused by damaged cells that release a chemical that in turn cause the apple to turn brown in that area. Oranges do not have that same chemical and so do not bruise.
