I have been asked if I want them to take the minimum amount of withholdings or the maximum - but I don't know where to find out this info!

How much will I be getting?

Many many Thanks!

No matter where you live in the United States, the Federal Tax on this income will be the same. As to State Income Taxes, I really don't know. I think that the first question that I need to ask you is, "Are you a new resident in New York State or have you lived there for some time." If you have lived there for some time, you should be able to look at a prior year return to determine a ball park figure.
Most states have a web site maintained by their department of revenue. If New York has one, I would suggest going onto this web site and downloading the proper income tax form and instructions in order to make this determination.
Sorry that I could not have been of more help. Perhaps, in time a New York state resident will see your question and answer it.
For whatever else it may be worth, I would go with the maximum, if it turns out that you overpaid, you will be entitled to a refund and that in my opinion is preferable to underpaying and being penalized for having had too little withheld.
