Chicken Alfredo
1/2 cup real butter
1 pint (2 cups / 16 fl. oz.) heavy whipping cream
1 tsp. garlic powder
salt and pepper - to taste
1 dash cayenne pepper
2/3 cup fresh grated Parmesan OR Romano cheese
1 lb. box fettuccine noodles - prepared as directed
chopped fresh parsley - for garnish, optional
-In a 2-quart saucepan over medium-low heat, melt butter; add cream, garlic powder, and salt and peppers; simmer for 20-30 minutes, stirring constantly, until thick.
-Remove sauce from heat and stir in cheese. Do not heat sauce after cheese has been added.
-Serve sauce over hot fettuccine noodles and sprinkle with parsley, if desired.
Though you can’t rush this sauce, if it seems to be taking too long to thicken, stir in up to 1/4 cup cream cheese. Make sure your Parmesan or Romano is grated and not shredded; it won't melt properly if shredded. Do not use Kraft® Grated Parmesan in the canister; your Alfredo won't taste right. Either grate your own or buy the stuff from the deli.

Tiramisu
3 egg yolks
1/4 cup white sugar
2 teaspoons vanilla extract
1 1/8 cups mascarpone cheese
24 ladyfingers
1 1/2 cups brewed coffee
1 tablespoon unsweetened cocoa powder
In a medium bowl, beat yolks with sugar and vanilla until smooth and light yellow. Fold mascarpone into yolk mixture. Set aside.
Dip ladyfingers briefly in coffee and arrange 12 of them in the bottom of an 8x8 inch dish. Spread half the mascarpone mixture over the ladyfingers. Repeat with remaining cookies and mascarpone. Cover and chill 1 hour. Sprinkle with cocoa just before serving.

I can't believe you forgot your anniversary....don't let it happen again..LOL Anyway, how about some kinda pasta...how about chicken and pasta...that should be easy for you to make, just read the cooking instructions on the box. As for the chicken, Tysons have chicken already prepared...it's called "chicken short cuts". The chicken comes already cooked, seasoned and ready to eat. You may want to cut the pieces a little smaller depending on what size you like. Get a nice sauce like Tomato and Basil...add some diced tomatoes w/mild chillies (canned by Delmont),add a salad and enjoy! I think the fact that you made it yourself should make her happy OR take her out for a fun night on the town!
Be humble, because you forgot this important day! Make sure you have a nice gift for her.

It really doesn't matter what you cook, since she will just be overly happy that you cooked something! If you want something simple but romantic, try spaghetti. It is so easy to make since you can buy the sauce already made in the jar. Put a nice caesar salad on the side and a nice bottle of wine. I hope you have a wonderful anniversary!

1 large flank steak, butterflied along the grain
Salt and freshly ground black pepper
6 ounces Asiago, shredded
8 ounces curly loose spinach leaves, washed, patted dry, stems removed
6 ounces Gorgonzola, crumbled
4 scallions, left whole
8 to 10 wooden skewers, soaked in water
Preheat grill or grill pan to high.
To butterfly the flank steak, start with the meat grain running up and down in front of you. With your knife, begin cutting the meat in half. Essentially, you want a thinner, larger flank steak. Continue cutting the flank steak in half until you reach about 1 inch from completely cutting through. Lay the cut flank steak open and even out the middle so there is not a thicker piece in the center. Or just ask the butcher!
Spread the flank steak out so that the grain is running left to right. Begin layering the flank steak with salt and pepper, the Asiago, then the spinach, the Gorgonzola and scallions. Begin rolling the flank steak tightly and away from you. Evenly insert the skewers 1 to 2 inches along the seam of the pinwheel to hold it together on the grill. Cut in between each skewer but not against the skewer; you want the same amount of meat on either side of each skewer. Grill the pinwheels on each side for about 3 to 4 minutes or until your desired doneness.

Beef Wellington is very easy and takes little time.
First, brown the meat on high for a few seconds. ONLY enough to brown it. Do not cook it.
Buy and defrost sheet phylo dough. Spread with liver pate - it comes in a small can. Buy two. Wrap the dough around the meat and seal edges.
Bake at 400 degrees for around 20 minutes. You want this to me medium-rare.
Serve with mashed potatoes with sour cream mixed inand fresh asparagus.

get a pound of hamburger meat combine with one sleeve of crushed cracker crumbs bell peppers and onions along with 3 eggs shape into a loaf put in a casserole dish drizzle ketchup all over the top of it bake at 350 for about an hour

peel and dice enough for the 2 of you let boil for about 20 minutes or until tender drain the potatos and put back in original pan smash them up with a fork or a smasher if you have one had add a little milk and lots and lots of butter and mash up somemore

Preheat the oven to 350 degrees F.
Spray a glass baking dish with cooking spray. Place the olive oil, garlic, rosemary and salt and pepper, to taste, in a large re-sealable plastic bag. Add the potatoes, seal and toss to coat evenly. Pour into the prepared baking dish. Roast the potatoes for about 30 to 40 minutes until crisp on the outside and tender on the inside.

Baby Lamb Chops with Wine (red or white) Sauce
The succulence of these baby lamb chops is complemented nicely by the rosemary-flavored wine sauce.
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
16 rib lamb chops
2 tablespoons olive oil
1/2 cup red or white wine
1/2 cup homemade beef stock or canned broth
1/4 teaspoon chopped fresh rosemary leaves, or 1/8 teaspoon dried
Stir the flour, salt and pepper together in a small cup and spread the mixture out on a large plate. Dip the lamb chops in the flour mixture on both sides. Shake off any excess.
Heat the oil in a large skillet and saute the chops over medium-high heat according to taste. Transfer them to a serving platter and keep warm. Pour the wine, stock and rosemary into the skillet and bring to a boil, scraping up all the cooked juices from the bottom. Remove the skillet from the heat, pour the sauce over the lamb chops, and serve immediately.

Tomato, Watercress and Endive Salad
Difficulty: Easy
Prep Time: 5 minutes
Watercress is readily available year-round and is a perfect way to sharpen up a salad. As part of a big meal, this dish can serve as a refreshing between-course palate cleanser.
1 large head Belgian endive, leaves separated
2 cups watercress sprigs (large stems removed)
4 medium-size ripe tomatoes, cut into wedges
Raspberry Vinaigrette, recipe follows
Arrange the endive leaves on a large platter, fanning them out from the center. Roughly chop the watercress, and sprinkle it over the endive. Top with the tomato wedges, and drizzle with Raspberry Vinaigrette, to taste. Serve immediately.
Raspberry Vinaigrette:
1/4 cup seedless raspberry jam
3/4 cup extra-virgin olive oil
1/4 cup raspberry vinegar
1/2 teaspoon minced garlic
Salt and pepper
Whisk all the ingredients together in a small bowl. Cover and chill until ready to use.

Prep Time: 5 minutes
Cook Time: 8 minutes
1 stick butter
1/2 cup brown sugar
4 bananas peeled and halved, cut lengthwise
1/4 cup dark rum
Melt butter in a large skillet. Add brown sugar and stir together. Add the bananas and cook until caramelized over medium-high heat. Pour in the rum and catch a flame off of the gas stove or a BBQ lighter. Stand back when ignited and flambe. Be careful; a flame will shoot up above the pan. Let flame die down. Serve over vanilla ice cream and/or a slice of pound cake.

make up garlic bread or get the already ready to be heated kind in the grocery store
serve with a tossed salad or cesar and a nice chilled wine.
get cheesecake or her fave ice cream and pie/cake for dessert.

just make a picnic lunch (sandwiches, cookies, whatever you have) and take her to the park, Nice if you brought some wine. Sweet and romantic. If you have the money, any restaurant will do. don't forget next year, LOL
