This isn't Jewish women in general, it's Orthodox Jewish women in particular. There is a biblical verse about keeping the head covered as a sign of respect to God, which is why Orthodox men always wear hats or kippa (the little yarmulke head coverings), and the women wear head scarves.
Also, there's a tradition that a women's hair is part of her sexuality and great beauty, so it's something she should only reveal to her husband. Wearing the wig is a compromise that allows her to function in modern society without revealing her real hair.

Orthodox Jewish women cover their hair after they are married because the hair is considered a woman's most attractive asset, and after marriage a woman's hair should only be seen by her husband.
Some women cover their hair with scarves or hats, some wear wigs, and some wear a wig AND a hat, depending on their beliefs and traditions.

Covering one's hair ia part of the mitzvah of tzniut (roughly translated as "modesty"). It goes together with the commandment of wearing modest apparel that covers certain areas of the body (arms, legs and neckbone, basically) and acting in a modest, non-attracting fashion.
These laws are aimed at concentrating on the inner self, which is what's truly important to value a person, not her outside appearance. Hair covering reminds women on concentrating on perfecting their inner selfs instead of focusing on outside beauty. It also saves their whole, natural beauty for their husbands exclusively, leaving something very special for them to share.
By this I don't mean that an Orthodox Jewish woman should look as unnatractive as she possibly can. On the contrary, Jewish women are encouraged to look attractive, but not attracting.

To cover their hair just like Muslims when they wear the vail or Hijab. I think it is a more practical way. Umm maybe I should think of it. I am muslim and I don't wear a hijab. You gave me a great idea. How did I not think about that before?
edit: wow solarius thank you so much. nice wigs but so expensive..
Thank you all.. love yaa

It could be due to the modesty rule, where their hair must be covered, with the exception of their husband as it is a part of their faith. However, it could also be due to the Breast Cancer Gene: One in 40-50 Ashkenazi Jewish women carries a BRCA1 or BRCA2 gene mutation, which greatly increases a woman's risk for developing breast and ovarian cancer. With cancer comes chemo and with chemo there is hair loss.

I am not Jewish, so this is a guess. The Bible says a woman's glory is her hair, and also, if a woman covers her head, it shows respect for her husband (if married) and the angels, so perhaps it is a sign of respect?

This custom is there among the ladies in india also. - Hindus in NORTH India,-Muslims in most of the States in India and Sikhs in all the states. Muslims ladies cover their heads and whole body with a black cloth(Pardha) all the time when they are outside their house--Hindu ladies in presence of male adult family members of their husband's house, elderly males of the society or in temples(it is called "Pallu").Christians and South indian Hindu ladies do not wear any kind of head covering special type of clothes, any where..But my Post-graduate female students(preparing for their Master's Degree) whether Hindus,Muslims or Sikhs, in South India used to remove Pardha,Pallu or any type of Head clothes (but wearing very Decent Dress as per our culture-one can not find who belongs to which Religion) inside the College and when they go out of the College, wear again the "Covering" clothes as per their religious customs. In North India Hindu/Muslim males also wear head Covering clothes in Temples/ Mosques or during Prayers or before Ascetics.Sikhs all through the day (except inside their houses) wear Turbans-it is one of the 5 Religious Symbols for them..

so they don't show their real hair to anyone but their husbands.
the part i don't get is why they get wigs that look so much like their normal hair... they look the same, so what's the point??
but then, that's using my own limited understanding.
