I have a half of a roaster chicken frozen and I want to make chicken soup. I have the worst luck defrosting in the microwave (parts end up cooked) and I don't have time to defrost overnight in a fridge. Can I make soup starting with frozen chicken? Any other options (i.e. improve my microwave defrosting skills)? I want to start cooking in like 2-3 hours.... Thanks!

Submerge the chicken in cold water, changing the water every 30 minutes for as long as you can. As soon as it is thawed enough, cut it up and continue thawing. It should be mostly or completely thawed by the time you are ready to start cooking.

Here is what I would do:
Brown or Sautee your vegetables.
Add your stock or water.
Put the frozen Chicken in.
Let it sit for about 2 hours, or until mostly thawed.
Start Cooking your soup.

Dont try to boil the frozen chicken, it will be tough!
If you ever need to micro thaw any type of meat,
use power level one, give it about 5 minutes per 2 lbs,
preferably on a turntable. Then let it rest for 20-30 minutes.
Turn it over and repeat until thawed. S-L-O-W is the key to defrosting Meat in the micro, otherwise you get cooked spots.

You don't need to defrost the chicken first.Put it in frozen and it'll be fine.

If you plan on using the chicken for your broth, just put it in the pot frozen, It should be perfectly fine.

if you have a slow cooker, put it in that.
otherwise, very low simmer with plenty of liquids (to cover the whole thing). somtimes people immerse the whole thing in warm water to thaw faster.
but i don't like that method.
