Need some easy chicken recipes for dinner. My husband is allergic to mushroom and pork. He also loves mexican pizza if anyone has an easy recipe for that as well!

The easiest and best way I have found to fix chicken is to sprinkle it liberally with garlic salt and then grill it. This works great with boneless, skinless chicken breasts but could work with bone in pieces too. If you don't want to grill it, you can broil it. I usually buy a box of chicken flavored rice to serve with it.

easy chicken recipe;
4 chicken breasts
parmesan cheese
italian dressing (kraft zesty italian is best!)
Pour dressing over chicken
bake 30 minutes @350
sprinkle with parmesan cheese
bake 15 more minutes.
Great with rice, pasta or just veggies!
Good beteewn two slices of garlic bread as a sandwich:)

CURRIED CHICKEN----This recipe is real easy. Take a 9x9 baking dish and spray with olive oil or vegetable spray. set oven at 350F and then place 6 chicken breast or thighs in dish. Season with a shake of curry powder lightly to taste and some salt and pepper. Place a piece of foil over the dish to seal and place in oven for 45minutes. When removing from oven, you will need to remove chicken to a dish and then drain grease out of dish to be discarded. Place chicken back in dish and then take one can of cream of chicken, 1 can of milk, 1can of water, and 2 cups of rice,1 small package of sliced carrots(or 1 can).Put these items in a medium bowl and mix thoroughly. When mixed, pour over the chicken evenly and shake some paprika over the top. Place back in oven for 25-30 minutes covered. Remove and and eat!! (Sometimes we use boneless chicken pieces such as breast cuts.) This will serve approximately 4-6 people. Enjoy as my daughters can make this and love it!!!

The easiest chicken recipe I know is:
1 fryer, cut up
1/2 stick butter
soy sauce
mild paprika
salt and pepper to taste

Heat oven to 350 degrees F
melt butter in a shallow baking pan large enough to hold the chicken pieces in a single layer.
Mix in enough paprika to make a paste, thin with soy sauce.
Dip each piece of chicken in the mix, and place skin side up in the pan.
Salt and pepper if desired.
Bake for one hour, turning half way thru.
Serve with rice pilaf, green salad, and crusty French bread!
Variation: use Teriyaki sauce instead of soy sauce, or use Hot Paprika instead of mild. Or, add hot pepper sauce, a teaspoon of liquid smoke to the paste and a tablespoon of tomato paste for a bar-be-cue taste.

here is my favorite chicken recipie. it takes little time to prepare about 15 minutes and cookes in 10-15

The Whole Enchilada

3 Tbs. vegetable oil
1 large onion, finely chopped
3 Tbs. flour
2 cans enchilada sauce
½ Tbs. chili powder
1 tsp. ground cumin
1 tsp. salt
One 2 LB Rotisserie Chicken (you grociery stores plain already cooked) shredded (2 forks worked great)
1 LB Muenster cheese, grated (I got the slices Sargento brand and cut up into small pieces)
3 chipotle chilies in adobo sauce (found in ethnic isle near taco stuff in most stores) seeded and finely chopped
12- 6 in. corn tortillas


1. In a med. Sauce pan heat oil over med-high heat
2. Add 2/3 of the onion and cook about 5 minutes until softened
3. Stir in the flour cook for additional two minutes
4. Whisk in 2 cans enchilada sauce , on can full of water, chili powder, cumin salt ; bring to a boil. Simmer for 5 minutes and then just set aside
5. Pre-heat broiler
6. In a large bowl mix together the chicken, 2/3 of the cheese and the finely chopped chilies
7. Spread one cup of the enchilada sauce in the bottom of the casserole dish
8. Dip one tortilla in the remaining sauce to cover both sides transfer to a plate add chicken and roll up
9. Place in dish seam side down
10. Continue step #8 until all chicken mixture it gone
11. Top with remaining sauce, onion ( I did not), and cheese
12. Broil until golden, 5-7 minutes
13. Turn off broiler and leave enchiladas in oven until heated through about 5 minutes

Serves 6

Here are a couple of easy recipes for chicken - they have been husband and kid (picky eater) approved.

Chicken Parmesan

4 boneless skinless chicken breasts
1/2 cup italian bread crumbs
1 tsp italian seaoning
1/4 cup grated parmesan cheese
1/4 cup shredded mozzarella cheese
1 egg
1/4 cup olive oil
7 oz. Fetticini noddles ( or favorite spaghetti noddles)
1 Jar/can favorite spaghetti sauce

Beat the egg into a shallow dish (big enough to put chicken in). Mix bread crumbs, seasoning, and parmesan cheese together in a shallow dish. Heat olive oil in a large skittle over medium hi heat. Dip each chicken breast into the egg wash then the crumb mixture. Carefully put into heated oil. Cook for 6 to 7 minutes each side, or done.

After done top with Mozzarella cheese - cook 3 to 4 more minutes until cheese melts.

While chicken cooks, cook your noodles and heat sauce.
Drain your nooddles well. Place on serving dish, top with sauce, then add the chicken.



SPICY GARLIC CHICKEN

3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/8 teaspoon paprika
1/4 teaspoon garlic powder
1/8 teaspoon onion powder
1/4 teaspoon dried thyme
1/4 teaspoon dried parsley
4 boneless, skinless chicken breast halves
2 tablespoons butter
1 tablespoon olive oil
2 teaspoons garlic powder
3 tablespoons lime juice


In a small bowl, mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on both sides of chicken breasts.
Heat butter and olive oil in a large heavy skillet over medium heat. Saute chicken until golden brown, about 6 minutes on each side. Sprinkle with 2 teaspoons garlic powder and lime juice. Cook 5 minutes, stirring frequently to coat evenly with sauce.

(We like it spicier so I will double the spice mixture)

I like to cook chicken in Italian salad dressing, instead of putting oil in the pan, just put a little dressing in, and pour a little over the top of the chicken too. Hopefully Italian dressing doesn't have mushrooms in it.
I'm allergic to onions and don't like mushrooms, so I just omit them when I make the dishes that call for them.

chicken piccata! never fails.

8 chicken cutlets
to your tasting garlic minced
1 cup white wine
3 tbs butter
2 shallots minced
to your taste capers
lemon juice

season chicken with salt and pepper, and brown on both sides. set chicken aside and in the same pan reduce white wine and lemon juice while scraping bottom with wooden spoon. add chicken. when liquid is almost evaporated stir in butter. sprinkle capers to finish.
