I once lived with a Marine Biologist, whose job included being called every now and then at any hour of the day and night to go to some beach and speedily dissect a dead beached whale...
They decay fast, and scientists rarely get an opportunity to dissect a large dead whale while it's still intact...
One time we were in the middle of lovemaking when the call came, and she left both of us with a "blue plate special (I thought it was funny...I wasn't disappointed)...
Now THAT kind of dedication impressed me...
(Female Dentists, too...I'll never go to a male Dentist again...female Dentists are gentle, kind, and painless...)

It wouldn't matter what they do for a living as long as they enjoy their life and therefore enjoy their work.
Consider this: A person may claim that they would be impressed if they met someone who works, say, as a pilot but if they met the pilot who complains and moans about their job, then would they be so impressed?

I'm not sure it's actually the "profession" but the guy has to be real good at it and like it himself first.
But I do like professions when they are honest and helping others.

School teacher, bar tender, nurse, executive and a house wife or mother, that pretty much covers the spectrum. It doesn't matter really what they are labeled. All though a kick-boxer chick would be interesting...hehe.

Something that involves helping other people, like a doctor/social worker/whatever. Creativity (music, art, anything) is a big plus.

artist, musician, writer, actor, carpenter etc. something with an element of creativity because it's something i can relate to and most people who do those things have the same aspirations and direction and philosophies as i do.
