That sheared off bone is the type of thing that started to show up when the government foolishly permitted "mechanically- deboned meat" in that kind of product.
If you look at the "fillet of chicken" in the boneless chicken meals you get in fast food places you can find the same potential choke hazards hidden in their meat too.
That bone fragment is the least of the stuff you would not like if the contents of a sausage were actually described. All meat just means it is all from meat animals. It does not mean that it is a ground up steak. It is parts of an animal you would hesitate to touch much less swallow but it passes government test for being "all beef" or whatever its label says.
Butchers have always eaten sausages since they were made from the leftovers the butchers could not sell. They know what is in there but good seasoning makes that palatable.

I'm not a butcher but I do love sausage.
I only eat sausage that is made containing no fillers. I feel sure that butchers enjoy sausage too!
Unfortunately one of the hazards of eating sausage is the possibility of getting a piece of bone fragment. They use bone separators to try to eliminate this, but occasionally there will be a piece.

If you go to a reputable family butcher where you always have to queue for the meat I would say yes. Don't buy cheap, maybe the piece of sheered bone in your sausage could have been a toe nail or a piece of beak!!!!

i dont think they would eat standard sausages!i worked in a buthchers,even now i cringe thinking some off the crap what goes into standard sausages!and they get away with it,because it is "meat"you are better off buyin decent sausages,not the cheap ones!after all what do you expect if you buy cheap sausages or burgers.

My husband is a butcher and he eats sausages, but never the prepacked ones from a supermarket.

in answer to your question do butchers eat sausages knowing what goes in them - my dad was a butcher and would'nt touch a sausage, knowing what went into them, he would even try to deter others from eating them, explaining the ingredients whilst sitting enjoyng theri bar-be-qued hot dogs!!!!

your claim is very hard to believe IF you have ever see sausage being made..
the meat is put through a grinder several times
herbs and spice is mixed
and then ground once more into the casing
NO- - way,,, tiny chips or flakes maybe from homemade.
Butcher's make hamburger or minced meat daily for years so if they made sausage?? they know the procedure
