Sometimes I choose them, and they're good. Sometimes I choose them, and they're...not so good. How can you tell if a watermelon is good as you pick them from the batch at the store?

First off size does matter.
You don't need to aim for a big gigantical one but atleast an average or above size.
Gently squeeze the ends. If their firm and well-rounded then yes yes if not then no no.
Color is also important
Darkish healthy looking green=yes yes
Lastly
Right in the center of the watermelon should be soft if it's soft then yes yes.
Hope that helps!

it is a really big issue
1) first of all be sure that it is not in a very bad condition (not bruised)
2) the yellow part is usually raw inside so it will be better if the yellow spot is on the bottom of the watermelon.
3) the stem of the watermelon should be still there and when you pull it hard it should come off, if it is already gone this is a sign to be overmature.
4) the sound of its is important. it should be deep (like beating a drum not a wooden door)
5) experience (you will eat bad watermelons until you find out the right technique)

I disagree with several as to how the melon should sound. I personally look for the sound of the drum when I knock on it...but that is what works for my taste. I can confirm knocking on the middle of the melon is the approach you seek, take note of the different sounds they make and particularly remember the sound of the one you purchase. If it turns out it has the taste you personally was looking for that you now know what sound to listen for. If not next time select one giving a different sound until you find that one that suits you best. From then on you will be able to pick with and good consistency the favored melon you prefer. This works on all types of melons.

I work in produce, and usually you can tell a good melon if you put one hand on top, one on the bottom and push gently inwards, there should be a slight give to it. Also good color, no spots. Where I work, we will gladly cut them in half for you, and then overwrap them so you can see it before you buy it. Ask the produce staff to do that for you, and if you don't like the look of it, don't buy it.

Apparently, you can tell if a watermelon is ripe by pressing the ends of it. If they feel slightly soft, then its ripe. If its hard, then it still needs to ripen.

Well, I learned long ago from my grandmother to thump them with a finger and listen to how it sounds. But, I'm not really sure how to describe the sound to you.
