I'm serving Yellow Tail Chardonnay white wine with dinner tonight. Is it best to serve white wine chilled from the refrigerator? or room temp?

I used to believe it had to be really cold straight out of the fridge. Until a family member who knows about these things told me not to put the bottle back in the fridge after I poured a glass one night. She explained that chardonnay was best to be enjoyed cooler than room temp, but a bit warmer than right out of the fridge. That way you can taste the flavors and aromas more. And she was right! Amazing amount of difference as the chardonnay warmed a bit. So I'd say take it out of the fridge and uncork it about 20 minutes before serving and set it out on the counter or table.

And have one cold glass right away, then try it 20-30 minutes later. Big difference!

First of all, if you are going to serve Chardonnay, yes it should be chilled from the fridge. Also, Yellow Tail is not a very good wine, in my opinion - sorry. Here are some bettter chard's that taste better....J. Lohr, Kendall Jackson, Barefoot, Sutter Home, Cambria, Sonoma Cutrer, Edna Valley, Hess - these are my regular rotation of chards that I love! I had actually bought Yellow Tail when it came out and I had it for dinner one night with my mother and sister - we are all chard drinkers - and we hated the Yellow Tail so much we dubbed it "kangaroo piss".

you should keep it in the fridge, until 20 min prior to serving. Then remove from fridge, open and then serve. It shouldn't be straight out of the fridge. give it about 20 min to take the chill off.
