I'm thinking about quitting my job soon, and would like to stay in the UK for 6-8 weeks after I quit before returning to the US. I've heard that once employment is terminated, the visa is no longer good and you have <2 weeks to leave. Is this true? Can I just stay and then leave in 2 months with no problem? Or can I leave the country soon after I quit and then come back right away on a tourist visa?

Your visa remains valid and you can lawfully remain upon it until expiry.
You cannot:
Work for any other employer (paid or unpaid)
Leave the UK and return on that visa (at least - not lawfully)
Remain beyond its validity unless you have applied for an extension or variation before it expires.

You need to check your visa and contract that you signed for a work visa. In the States for example you have 90 days to leave, so 2 weeks seems alot sharp to me to leave the UK, but I could be wrong! Also if you are fired/leave on your own accord, are they still responsible to fly you and your belongings back to the States. So you have to pay yourself?
