I usually make a risotto with sausage when I get bored with mash.
Cut the sausage into bite sized pieces and brown in some olive oil in a large pan/frying pan. Then add some chopped mushrooms and peppers (or whatever you fancy), add some arborio rice (about 80-90gms per person), salt and pepper and some dried mixed herbs and continue frying for a couple of minutes. Next add some stock (oxo cube + boiling water will do fine) - just enough to cover the rice. Simmer for about 15 mins, but stir regularly so the rice doesn't stick and keep topping up with the stock if it starts to get too dry. When the rice is cooked stir in some finely grated Parmesan cheese and adjust the seasoning. Then serve and enjoy!
Arborio or Risotto rice is fairly widely available from Tesco's, Sainsbury's etc.

Cook the sausage but remove it five minutes before it is cooked.
Make some Yorkshire pudding batter (100g plain flour, 1 egg, pinch of salt, enough milk to make a smooth batter).
Put 2 tbsp olive oil in a small ovenproof dish into the oven on gas 7 for 10 minutes, until really hot. Put the sausage into it then about 3/4 cover it with Yorkshire pudding batter. Put back into the oven until the Yorkshire pudding is cooked.
Serve with onion gravy, mmmmmmmm.

Youcould go a bit French and do it with lentils or make a cassoulet.
Ingredients
350g/12oz sausages
110g/4oz chorizo
30g/1oz dried mushrooms
1 tbsp roughly chopped fresh rosemary
1 tbsp roughly chopped fresh thyme
4 tbsp extra virgin olive oil
1 large onion, peeled and finely chopped
4 cloves garlic, peeled and crushed
450g/1lb mixed mushrooms, sliced
400g/14oz tin white cannellini beans, drained and rinsed
400g/14oz tin kidney beans, drained and rinsed
400g/14oz tin flageolet beans, drained and rinsed
400g/14oz can chopped tomatoes
2 tbsp tomato purée
2 bay leaves
55g/2oz fresh white breadcrumbs
salt and freshly ground black pepper
Method
1. Preheat the oven to 180C/350F/Gas 4.
2. Place the sausages into a roasting tin and cook for 30 minutes or until the sausage is cooked and brown. Turn the sausages occasionally. When the sausages are cool enough to handle cut on the angle into 2.5cm/1in pieces. Save any fat in the pan. Cut the chorizo to similar pieces and fry gently.
3. Place the dried mushrooms into a food processor with the rosemary and thyme. Process as finely as you can. Using a large pan mix this powder with 570ml/1 pint of boiling water. Stir and set aside.
4. Meanwhile, add the oil to the pan with a lid and gently fry the onion and garlic for about 15 minutes until the onion has softened, but not coloured. Add the fresh mushrooms and cook over a high heat for about 3-4 minutes until they have started to colour.
5. Add the tinned tomatoes and tomato purée to the mushroom stock, mix and then add the beans and the mushrooms and onions.
6. Mix well and bring to the boil. Season with salt and black pepper. Add the sausages and any saved fat from the roasting pan. Add the bay leaves and simmer gently on the top of the stove for 30 minutes, stirring to prevent it catching.
7. Cook until the liquid is reduced and clinging to the beans.
8. Sprinkle over the breadcrumbs and place under the grill or in the oven until golden. It can also be cooked in the oven for 1 hour at the same temp.

Tangy sausage pot
Sausages
1 onion chopped
1 tin tomatoes
1 apple chopped
1 mug of rice
1and a half mugs of water
salt and pepper
tsp of paprika
tsp of thyme
Throw all ingredients into oven proof dish, place the sausage round or sausages on top, cover.
190 degrees. for 45mins. Remove lid for further 10 mins. Serves 3-4.
Green beans and french bread.
Tastes good cold as well

I Like to make sausages with pasta.
Chop your sausages and an onion fry in some olive oil till browned.
Then pop in a tin of chopped toms and chillipowder simmer for about 15 mins.
Have with cooked pasta and crusty bread lovely.
Andromeda can I come to yours for tea that sounds lovely.

Fry some onions in olive oil or whatever oil you have, cut up and fry the sausages with some herbs and spices - I like oregano, paprika or cumin. Then add a can of chopped tomatoes, a squeeze of ketchup, a squeeze of tomato puree and half a tsp marmite (optional). If you can't be bothered pour in a jar of tomato sauce and serve with rice. Mmmmm

You could try doing something different with the potato's. My Nan gave me a nice recipe for something like Lyonnaise Potato's. I think it was boil the potatoes, then cut them into slices, fry the potatoe slices with some chopped onion until potatoes are golden and onion is cooked and serve.
