I remember going through another state on vacation and seeing it advertised, now can't remember what they called it. We may have been in Montana??

Roast beef in between 2 pieces of white bread, with mashed potatoes on the side and gravy poured over it all.....I saw it called a name besides Hot Beef----does anyone know it?

French Dip.
Rare roast beef, French roll, au jus for the dipping.
That's what we call them in Boston.

One that is served open faced on bread with beef, mashed potatoes and gravy is called a "Manhattan". Beef in a roll you dip in Au jus (beef broth) is called a "french dip". Both are yummy :)

If it is chipped beef it's called S.O.S. In the army it's the abbreviation for **** on a shingle.
If it's sliced then hot beef sand. is correct.

In parts of NY they call them "Beef on a Wick". Other sandwich names: subs, torpedos, grinders, hoagies, etc.
