One that is served open faced on bread with beef, mashed potatoes and gravy is called a "Manhattan". Beef in a roll you dip in Au jus (beef broth) is called a "french dip". Both are yummy :)

If it is chipped beef it's called S.O.S. In the army it's the abbreviation for **** on a shingle.
If it's sliced then hot beef sand. is correct.

In parts of NY they call them "Beef on a Wick". Other sandwich names: subs, torpedos, grinders, hoagies, etc.
