God should be only and one to all. But why Jehovah is the God of Israel only? Why he should chose only Israel as his people/nation?

Jehovah had made a special covenant with Abraham, and later with Jacob (the father of the twelve tribes of Israel).

(Genesis 22:15-18) Jehovah’s angel proceeded to call to Abraham... “‘By myself I do swear,’ is the utterance of Jehovah, ‘...I shall surely bless you and I shall surely multiply your seed like the stars of the heavens and like the grains of sand that are on the seashore; and your seed will take possession of the gate of his enemies. And by means of your seed all nations of the earth will certainly bless themselves due to the fact that you have listened to my voice.’”

(1 Chronicles 16:14-17) He is Jehovah our God...Remember his covenant even to time indefinite ...Which covenant he concluded with Abraham, And his sworn statement to Isaac. And which statement he kept standing as a regulation even to Jacob, As an indefinitely lasting covenant even to Israel

It would be through fleshly Israel (and later through spiritual Israel) that Jehovah could bless all of mankind.

(Romans 9:6-8) For not all who spring [genetically] from Israel are really “Israel.” Neither because they are Abraham’s seed are they all children, but: “What will be called ‘your seed’ will be through Isaac.” That is, the children in the flesh are not really the children of God, but the children by the promise are counted as the seed.

Jehovah is God the Father, Omnipotent God Who created everything. He was called God of Israel when the grace of God was not revealed to the Gentile but God promised to Abraham that in him will be blessed all nations of the earth. So He did with help of Jesus, his Son. Jesus is the Savior of all people, because He is the very One Who paid the price for the sin of whole world.

Because people are insular and xenophobic. It has nothing to do with God; it is about a single group of people making an unjustified claim to exclusive knowledge of truth. Most religions have more than a few sects who are guilty of this closed way of thinking.

That was only a beginning. Today, the entire worldwide Christian church constitutes the "chosen people" of God.
