Breezer - you'll need onions for this one....
Cut 3 big yellow or white onions into chunks and put into a hot pan with olive oil, cover and stir until the onion starts to brown. Try not to break up the chucks to much. Take the seeds out of the peppers and cut or tear up then up into bite sized pieces. You can use one of each if really large or two of each if medium. Add the peppers when the onion is ready.... cover. The peppers will create liquid so after the first ten minutes take the lid off, stir and add 2 cups of peeled large chunks of the tomatoes. Let reduce.... and cover again. You basically want the peppers to wilt so you'll have to cover and uncover several times. When all is nearly done add: 4 or 5 table spoons of white vinegar and 2 of white sugar... salt to taste. Stir again - you'll know when it's ready when the pepper is no longer "crunchy".
This can be eaten hot or even better several days later and cold.
PS - you can add cut up celery to this when the onions are half way done.
PSS - You may want to add garlic (when you add the pepper).
PSSS - You can also add (washed) salted capers.
PSSS - This is also made with egg plant chucks - add them when the onions are nearly done. Careful 'cause you'll get plenty of ligud that you'll have to reduce.
PSSSS - carrots can be added too.

There are many things, chop up some meat of your choice, add some mushrooms, saute it all together with the peppers and a little stock or soy sauce and serve it over some hokkien noodles or vermicelli rice noodles. Or you could make a vegetable stew like Ratatouille.
To the capsicum, add onion, chilli(if you want to) boiled chopped potatoes, green beans, mushrooms tomatoes, squash (not pumpkin-there is a vegetable called squash) eggplant, add a little chicken or vegetable stock to this will a dash of red wine some salt and pepper to taste stew it all up in a pot and serve with some crusty bread and enjoy.

You need potatoes and eggs for mine, it also has onions in it, but as I recall your family don't like onions, so leave 'em out.
Chop the peppers, and the tomatoes. Take a bag of baby new potatoes, and scrub and clean them. Cut them in half, and boil just until tender. Drain well. Saute the peppers and tomatoes, then add the potatoes. Season with salt and pepper. Poach some eggs, then serve the potato mixture on a plate with the poached eggs on top.
Also delicious with a bit of chorizo or ham added in.

How about, 2 types of meatballs for an entree, turkey and beef, with a couple of different dips, (Miniature ones) serve on 1 platter over some shredded lettuce Lemon Chicken, served over rice, add some cucumber to the sauce if you wish Sweets: Use the can of evaporated milk to make a cheat's "creme brulee", just boil the can for a couple of hours, you do need to be very careful doing this. Tip: Keep a general supply of veggies in the crisper, would have been a bit easier, carrots, celery, what's in season, generally Have fun

TOMATO PUREE
1 onion
3 stalks celery
3 sweet peppers
12 cups tomatoes (quartered)
SIMMER all ingredients until soft. Press through sieve, season with salt and pepper. Fill jars to within 1/2 inch of top. Put on cap, screw band firmly tight. Yield: 4 pints. Process in Boiling Water Bath 45 minutes.
or .... stuff the tomatoes and peppers with lots of yummy stuff and stick them in the oven to bake...until they look and smell really nice....nur so eine kleine idee ;)

Sounds like you could do chinese. What about Sweet & Sour? If you don't want meat you can use what you have - deep fry the peppers and make a sauce with the tomatoes, vinegar, sugar, garlic and onions if you have any.

If you have a can or two of tuna and some onions/herbs/spices you could mix these with the tomatoes to make stuffed peppers. Add cous cous if you'd like more carbs in it...

you can make a deliciuse tomatoe soup=boil and blend tomatoes -add some dried mint+salt+olive oil+(If you have rice 1cup)+add steamed peppers=>> enjoy it
