Proper depends on what you like.
You need a hen top start with. Drop into 6 quarts on water, add a bay leaf, a small onion, a peeled carrot. When it starts to boil add salt, turn down the flame and let reduce to half. Take the chicken out with a slotted spoon and set aside. Pour the broth thru a sieve into a receptacle and let cool. Either blend the carrot & onion and add to the broth (or eat it as I do) or chuck out. I like to keep some chicken fat in my broth - if you don't then wit until it cools and put in the fridge. It will congeal in the cold and it's therefore easier to remove (the fat).
De-bone the chicken and use in your soup or make a salad.

It's often recommended to save otherwise unusable parts to make stock with, but since you want the meat for your final product, I would use a whole chicken cut up with skin mostly removed. Definitely include the bones-they add so much flavor. After that it's kind of individual choice whether you add herbs/spices or vegetables for extra flavor. A lot of cooks add the seasoning at this stage so bits of herb, etc. can be strained out. I use the peelings and ends of celery, carrots and onion that I will put in the soup for more flavor ( and because I am cheap and hate waste).
Go nuts, create your own signature dish and have fun!

Never ever boil your chichen to make a broth roast your chicken in a roasting pan only add water when you fishi roasting. This will make your brith more tasty than any boiled chicken. To make the best potato salad you bake youe potatos too this way you do not pour out your flavor. Do both methods side by side an you will taste the quality difference.

you are not making a broth, but are making a chicken stock.
You can use the whole chicken. But I would just use some of the fat (skin) and a lot of bones with some diced vegetables. let it simmer NOT BOIL for several hours and just skim the top of it to get the fat off it.

First you find a proper chicken....

sorry...couldn't resist.

I'd cook the whole thing, cut up...throw in some celery, onions, and carrots. Yum!
