I'd treat an open jar of pasta sauce as if it fit this category:
Soups & Stews
Vegetable or meat-added & mixtures of them
They are considered safe in the refrigerator for 3 to 4 days.

We eat pasta all the time and we could have a jar in the fridge for a month. As long as you heat it up properly it will be good. I wouldn't try doing like 6 months though lol We also freeze pasta too since we eat so much pasta. Freezing it will last longer. So if you want to keep it for a long time then freeze it. It doesn't take that long to thaw out.

Tomato based pasta sauce is acid and thus will last longer than cream or milk based sauces. Commercial sauces have preservatives added, but even the home made sauces with meat that I make are good after 1-2 weeks.

After I open a jar of sauce I store it in the fridge upside down. This removes the air which causes mould and it lasts a long time. I store all my jars this way. It's a trick I learnt from a cooking program on TV..

I've had homemade sauce last 2 weeks in an airtight container. Store bought, scarily enough, up to a month.

I always empty the leftover sauce in a plastic container
with a good tight lid, & put in the deep freeze.
sometime months its still good. take it out when ever
I want to use it.
try this method you'll see theres no waste.

I wouldn't eat anything that's been in there more than 2-3 days.

i used an old jar of prego that was in the fridge for like a month and i didnt die or anything.
