The cookie dough that they use in the ice cream is not made with eggs. The recipe for the dough looks something like this:
2 ounces unsweetend chocolate
1 3/4 cups chocolate chips
1/2 cup butter
1 cup sugar
2 teaspoons vanilla extract
2 tablespoons water
1 cup flour
1/4 cup milk chocolate chips
. The cookie dough on its own doesn't taste as good as it would normally, but with the ice cream it tastes great!

It's most likely made with cookie dough that does not contain raw eggs. Cookie dough doesn't have to have eggs in it, although recipes usually do call for eggs. I believe the eggs only make a difference when baking though, so for raw cookie dough that isn't meant to be baked, there's no point in adding eggs.

Most of the time they seem to use a egg subsitute, or it has been pasturized (heated to a point where no bacteria can survive). They really wouldn't be able to sell it otherwise.

they probably use pasturized eggs or they very lightly cook them before they put it in the batter to kill any bacteria, at least that is what I am hoping that they do, because if they did not I am sure that there would be a huge to do about it.

yeah, but egg nog is really just raw eggs too so yeah. raw eggs are really nutritious and edible raw.
