They have been taught to use the "good book" as a crutch for quite some time. They can't help it. Even if they didn't quote a verse they would ask their pastor and they would quote one.
They have been collectively taught not to question the church and its dogma, so the church makes a lot of their decisions for them.

I guess I should remind you that this is the Religion & Spirituality section. So if you have a problem with bible verses, then this may not be the section for you. I don't always include bible verses, but when I do, it's because so many questions start with something like... "why doesn't God allow sex before marriage?". And/or the verses always show God is right. I guess those people don't like being proven wrong, huh. Oh, and yes I made my own decision...to follow Jesus. Of all the decisions in my life, that is the only one that matters in the end. Have a good day.
II Timothy 3:16-17 -- 16All Scripture is inspired by God and profitable for teaching, for reproof, for correction, for training in righteousness; 17so that the man of God may be adequate, equipped for every good work.

It is rather like how muslims confront you with quotes from the Q'uran. Or Mormons from their good book.
It is a combination of having been led to believe something is so true that you have no doubt -- even if anyone with logical reasoning would have plenty of doubt.
And people generally just think others should agree with them, and if you don't you are classified as a mental midget or heathen. Just look at all the non-religious controversy about global warming, politics and so on.
It is tough being right all the time but it is comforting to believe that you are, sabes?

First off don't speak in general terms as not ALL christians turn to the bible for all their explanations. Second off regardless of whether or not the bible is the word of god it still offers much good advice to live by. i.e. "judge not lest ye be judged", "love thy neighbor.", "treat others as you wish to be treated." etc. etc. Even I'll quote the bible on occassion if I feel it's relevant or it fits/would help with making a point, and I'm not even Christian, I'm Pagan. The bible has a great deal of wisdom to offer if you know where to look.

It's a shame. I was looking at a question about ten minutes ago, regarding learning about witchcraft. A few christians had to stick their oars in and quote bible verses (from the old testament no less, the one which they pick and choose from) saying witches were an "abomination to the lord" and people should "suffer not a witch to live"
They don't seem to realise that, as far as non-christians are concerned, it has the same authority and factual reliability as quoting from the Cat in the Hat.

I will answer that with a Bible verse:
Heb 4:12 For the word of God is quick, and powerful, and sharper than any two-edged sword, piercing even to the dividing asunder of soul and spirit, and of the joints and marrow, and is a discerner of the thoughts and intents of the heart.
Peace be with you

It's their only defense. Unfortunately for them though, the people who confront them usually don't believe the Bible so it's a pretty weak defense. As for the rest of the question, no. They have to ask their book before they do anything.

let's be fair. not all christians answer questions that way. the ones you have encountered may have done so, but please realize that many christians have their own thoughts and opinions. i have a lot of christian friends and they have never tried to convert me or push me toward church. when i do have questions about their faith, they explain it in their own words. the one occassion they referenced a Bible verse was when i asked a really loaded question. they've been nothing but courteous and NORMAL. think about it, if someone asked you to show them why a hostess cupcake is unhealthy, you reference the nutrition facts label.

Not every time, but often when they're confronted with a rational argument that they are having trouble refuting they'll fall back on Bible verses.
