I use fresh when I've just finished cooking and serving dinner but since we take leftovers to work the next day I use the can it's simpler to carry and since it's always cold in my office I can keep it in my draw and the free loaders at work can't help themselves.

I've actually been steering clear of the whole cholesterol and saturated fat scene...of which parmigiano can be a beast...now I use Nutritional Yeast Flakes--buy at whole foods

I keep the green can in the fridge for my husband who uses it on some soups.

I use the fresh for everything else as long as I have it around.

I hate to be the only one to say so but, I always keep a can of it in my fridge. I love fresh but I find that for dips like hot artichoke etc. it's the way to go!

Yum, use the fresh stuff. I think it is stronger then the junk in the green can.

fresh stuff, always. it adds so much richness to food. i also save the rind and throw it in my sauce the next time i make it or in soup. really adds a lot to the sauce or soup...
