Hello Stephanie! I love to fry my chicken but here is a delicious recipe for baked chicken.
BAKED FRIED CHICKEN & GRAVY
1 whole chicken, cut into parts
milk
1 stick (1/4 pound) butter
1 cup flour
1 tablespoon seasoned salt
2 teaspoons paprika
3/4 teaspoon pepper
1/2 teaspoon salt
For the gravy
2 tablespoons chopped scallion
1/2 cup chopped fresh mushrooms
3 tablespoons butter and drippings from baking dish, combined with scraped up crispy bits from chicken
2 tablespoons of the leftover flour seasoned for chicken preparation
1 cup milk
1 chicken bouillon cube (optional) preparation
Make chicken:
Soak chicken in milk to cover for 20 to 30 minutes. Spray a baking dish (one that will accommodate all the chicken pieces comfortably in one layer) with nonstick vegetable-oil spray.
Preheat oven to 400°F. Put the butter in the baking dish and heat it in the oven until the butter melts. Mix flour and seasonings together in paper sack or plastic baggie (1-gallon size). Shake each piece of chicken in seasoned flour. Place chicken pieces, skin-side down, in baking dish. Bake for 20 minutes. Turn chicken over and bake an additional 20 minutes or until cooked through and crispy. Remove chicken and set aside in a warm place.
Make gravy:
Sauté the scallions and mushrooms in the drippings over medium high heat, until soft. Mix the seasoned flour with milk first until you see no lumps. Whisk milk mixture into the sautéing onions and mushrooms. Taste and add bouillon cube, if desired (You may want to use additional milk if you do). Boil until thickened to preferred consistency. Put into a gravy dish and serve alongside the baked chicken.

To get extra crispy skin on chicken done in the oven you must go with simple and minimum ingredients, the moment you start coating chicken with multiple items you lose the ability to crisp it. I usually go with the pieces dipped in melted butter, then a touch of salt and pepper and what ever spices you might like, place on a rack above the pan and bake at 350 for approx. 1 hour.
Should you like a variation, try dipping pieces in melted butter, then drop into a bag of cerushed potato chips, shake and coat well, place on rack and bake for 1 hour at 350. You'll enjoy it, nice texture and very moist.

INGREDIENTS
1 (4 pound) whole chicken, cut into pieces
4 cups oil for deep frying
MARINADE
4 cups water
1 tablespoon salt
1/2 teaspoon monosodium glutamate
COATING
1 egg, beaten
1 cup milk
2 cups all-purpose flour
2 1/2 teaspoons salt
3/4 teaspoon ground black pepper
3/4 teaspoon monosodium glutamate
DIRECTIONS
Preheat oil in deep fryer to 350 degrees F (175 degrees C).
To Marinate: In a large glass dish or bowl, combine the water, salt and monosodium glutamate and mix together. Add chicken and turn to coat; cover and refrigerate to marinate for 20 minutes, turning a few times.
In a shallow dish or bowl, mix together egg and milk. In a separate shallow dish or bowl, mix together the flour, salt, pepper and monosodium glutamate. Remove chicken from marinade (discarding remaining marinade) and drain. One at a time, dip chicken pieces into flour mixture, then egg/milk mixture, then flour mixture again, making sure each piece is well coated. Stack coated pieces on a plate or cookie sheet.
Drop chicken, one piece at a time, into hot oil. Fry half of the chicken pieces (4 pieces) for 12 to 15 minutes or until golden brown, then fry remaining pieces for the same amount of time. (Note: Stir chicken around halfway through the frying time, so that each piece cooks evenly). Drain fried chicken for about 5 minutes on paper towels or a wire cooling rack before serving.

Homemade Shake-And-Bake
!/2 cup flour
1 tsp paprika
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp dried thyme
1/4 tsp freshly ground pepper
4 chicken legs and thighs (I just use thighs)
1/2 cup milk
1. Preheat oven to 375 degrees. Combine all ingredients except chicken and milk in a paper or plastic bag.
2. Dip chicken in milk; shake off excess. Add to bag and shake to coat evenly. Place chicken on a greased baking sheet (Pam). Bake 40 minutes, until chicken is tender and coating is crisp.
