Although not a buffet, I can highly recommend Red & Hot at 56 Faulkner Street. It serves authentic Sichuan food and quite often you will find you are the only westerners in the place! If you like your food spicy its the place to go!
The place to go for Cantonese food is Galmorous, which is located on the second floor of the car park above the Wing Yip supermarket on Oldham Road.
I've spent a lot of time in China and can honestly say that these two restaurants are among the most authentic I have found in the UK.

Peking Court on Princess Street is pretty nice. Reasonable prices, particularly during the week, plenty of food to choose from... I'm not even too keen on Chinese food (prefer Indian) but there's plenty there that I like, and dessert is good too. And it's only a 30 second walk from Canal Street, BONUS POINTS! :D
Clearly you're advertising your own buffet here, but my friends and I will probably try it. Our favourite restaurant in Manchester (not Chinese) is Umami on Oxford Road, by All Saints MMU campus.

Try the one in Swinton on Chorley Road opposite the Town Hall. It does a lunchtime buffet for £5.99 and you can eat as much as you like. Monday to Thursday evenings it's about £7 and Friday and Saturday around £10. There's a choice of around 40 dishes and they do a teriyaki as well. Every time i go I get stomach ache by eating too much. One word of warning. Drinks are pricey.

The Chinese in the Printworks is good. Especially the crispy duck and the king prawn dishes.
