Windows will intelligently figure out between FAT and FAT32, then as to NTFS/FATx choose NTFS for one of following reasons:
- security
- per file that is greater than 4 GB
- fast computer that is not intended to have older Windows 9x installed.
- built-in file encryption and compression.
"Quick" format is a convenient method only for preformatted but messy hard drive.

ntfs, quick ntfs only does a only a quick reformat. Anyway if you want to install Windows XP you need to choose ntfs as XP doesnt support Fat, that was the system used under DOS and Windows 95.

FAT is fine for smaller drives (under 32 gigabytes). It is most commonly used nowadays on thumb drives. It tends to be a bit faster than NTFS.
NTFS is more secure. It is better for drives larger than 32 gigabytes.
So, basically, if it is an older computer, you might want the increased speed of FAT. If you are on a newer computer, the difference will be negligible, so you should use NTFS.

ntfs is best for windows because it will make it more capable of doing windows stuff. it is able to do fat32 stuff too, osx can read that too so i think you might be able to share files.
ntfs, my $30 windows xp book says so.
