Mouse Traps.
Toast 6 slices of bread
Sprinkle with grated tasty cheese and cut into fingers.
Bake in a slow oven for 30-45 minutes until crunchy.
Store in an airtight container.
Vegemite under the cheese tastes nice and sweet.
Bacon sprinkles could also be added.
Cheese Rolls.
Spread sandwich bread with butter or margarine and sprinkle with grated tasty cheese and fold into 3.
Place under a heated grill, and toast turning when the first side is done. Spread with butter on the top and serve.
Options; add some spring onions, chives or garlic chives, spread bread with butter and vegemite, or make with cold mince.
Options; To toast, use a sandwich press, George Foreman Grill etc.

Besides all the recipes that others have offered, don't forget that you can freeze the cheese and then use it as you want over a long time. I pulled some out of my freezer today that has been there for a year and it's absolutely fine. Just make sure it's in an air tight container or plastic bag.

You can freeze your left over cheese and use as needed. Try this great mash potato recipe:
*******TEXAS CHEESY BBQ GARLIC MASHED POTATOES
1 lb potatoes, peeled
3 tablespoons butter or spread
1/2 teaspoon garlic powder
1/4 cup bbq sauce
2 tablespoon vinegar
1/2 cup sharp cheese, shredded
Cut potatoes and cook in boiling water until tender. Mix BBQ sauce with Vinegar.
Drain potatoes, and place in large bowl with butter or spread and BBQ sauce mixture. Mix to desired consistency, then fold in garlic powder and cheese. Enjoy!
Other Options: Place potatoes in bake ware, sprinkle cheese on top and broil until cheese is browned and melted.
Add egg and place in a hot pan for 2 minutes then flip and cook for an additional 2 minutes.

If you really don't want to use it up now....you can freeze it and use it when you want to. Great uses would be for tacos, to use in lasagna, sprinkle on salad, put on burgers for cheeseburgers, use on pizza, make a cheese sauce after making a roux first and adding a little milk, then add the cheese, make mac and cheese, nachos, sprinkle on hot veggies such as broccoli and cauliflower, etc. There are so many uses.

Welsh Rarebit! Make a regular white sauce and add grated cheese. Sorry I don't know quantities, I just do it. Take a slice of toast, put a tomato slice on top, then pour the cheese sauce over that and put bacon slices on top of that. Mmmm Mmmm.

5 each slices of bread
2 cup shredded cheese
1 each egg, slightly beaten

Directions
SET OVEN TO BROIL. BROIL BREAD UNTIL BROWN ON ONE SIDE. BLEND CHEESE,
