If you send an audio signal to your tv through a regular analog audio cable, then send it to your home theater system with a digital audio cable from your tv, will the signal be up converted from analog to digital 100%, some what converted, or not converted at all?

Depends on the TV.
Some TVs may be able to output PCM audio (2-channel) via s/pdif, but some others may only output analog audio via the analog audio jacks.

Out of all my years typically it is not coverted at all. Old school rules then apply. Don't care about the mess if you want the best. Send the sound directly to reciever. Preferably optical or Digital Coax not the old white/red plugs. White/red works for old dolby digital but all the new stuff including my fav DTS really wants optical.
