This time of the year it is hard. Sometimes I keep the whole grain bread in the fridge which helps a bit. Otherwise a lot of times I am throwing the white out before it's half gone, but ya have to have fresh bread.

I get my bread from the store on a 2-for1 special. One goes straight in the freezer. The other one I use for a few days, and then put it in the fridge. And if you need the frozen bread, just pull it out and let it sit out for a couple hours, then straight to the fridge.

my suggestion is to keep your bread in the freezer and only take out what you need this will keep it longer and freezing wont allow the bread to mold. after taking bread out of freezer make sure you stand bread on the the end of the loaf so if any moister is in it this will allow the moister to settle to the bottome in which will be in the end peices and rest of the loaf it fresh. generally takes about 20 -30 minutes for whole loafs to thaw.individual peices take about 5 minutes or less to thaw let thaw and eat taste so fresh. important thing with bread is if you make fresh bread from history and industries whom make bread say this. In 1678. One word as to the unwholesomeness of new bread and hot rolls. When bread is taken out of the oven, it is full of moisture; the starch is held together in masses, and the bread, instead of being crusted so as to expose each grain of starch to the saliva, actually prevents their digestion by being formed by the teeth into leathery poreless masses, which lie on the stomach like so many bullets. Bread should always be at least a day old before it is eaten; and, if properly made, and kept in a cool dry place, ought to be perfectly soft and palatable at the end of three or four days. Hot rolls, swimming in melted butter, and new bread, ought to be carefully shunned by everybody who has the slightest respect for that much-injured individual -- the Stomach.

Keep it in the freezer. Take it out as needed, it don't take long to defrost.
