Take your potatoes whole and slow roast them in the oven. When they are cooked peel and mash them with a good knob of salted butter, add a little freshly grated nutmeg to the mix and while continually mashing add hot cream to the mix until the mash has the wanted consistency.

Will go with just about any dish.

Herb Mashed Potatoes
4 lbs baking potatoes, peeled and cut into 1 inch pieces
6 cloves garlic, peeled
1/2 cup milk
2 tablespoons butter
2 tablespoons finely chopped fresh rosemary or 1 teaspoon dried rosemary
2 tablespoons finely chopped fresh chives
2 tablespoons finely chopped fresh parsley
1/2 cup sour cream
salt
white pepper

Place potatoes and garlic in a heavy saucepan, cover with cold water and bring to a boil. Reduce heat and simmer partly covered about 15 minutes or until potatoes are fork-tender. Drain well, return the potatoes to the pan and place over high heat. Briefly stir or shake the pan to keep potatoes from sticking or burning until the outside of the potatoes begin to dry to a white color (1 to 2 minutes). Remove from heat. While the potatoes are cooking,chop the herbs, add the milk and butter to a small sauce pan and heat until butter is melted. Remove from heat and stir in the rosemary, chives and parsley. With an electric mixer, beat the potatoes and garlic until smooth. Beat in the milk-herb mixture, sour cream and season with the salt and pepper.

Cowboy Mashed Potatoes

INGREDIENTS
1 pound red potatoes
1 pound Yukon Gold (yellow) potatoes
1 fresh jalapeno pepper, sliced
12 ounces baby carrots
4 cloves garlic
1 (10 ounce) package frozen white corn, thawed
1/4 cup butter
1/2 cup shredded Cheddar cheese
salt and pepper to taste
DIRECTIONS
Place red potatoes, yellow potatoes, jalapeno pepper, carrots and garlic cloves in a large pot. Cover with water, and bring to a boil over high heat. Cook 15 to 20 minutes, or until potatoes are tender. Drain water from pot.
Stir in corn and butter. Mash the mixture with a potato masher until butter is melted and potatoes have reached desired consistency. Mix in cheese, salt, and pepper. Serve hot.

Peel about 7 or 8 potatoes, cut them into small cubes, add them to boiling water ( enough to cover the potatoes ), boil them until you can easily put a fork through them, Drain the water, add a few big spoon fulls of Butter or margarine, add a splash of milk, salt and pepper to taste and whip them with a hand mixer or whatever kind of mixer that you have....
Sometimes I will add some shredded cheese and sour cream to these while I am whipping them.
Top with some gravy.

IF you had leftovers...that's always the problem at our house...When we DO have leftover mashed, I like to beat an egg with a little cream and then add it to the taters. Mix well, and add a bit of black pepper and onion or garlic powder. Then form the potato mixture into patties....dredge in seasoned flour (I just do salt, pepper, and paprika) and fry in butter until brown and crisp outside and warm and creamy inside. Mmmmm

In addition to milk and real butter, I like to add cream cheese- preferably a flavored variety with garlic or onion, plus I like to add garlic/pepper/salt seasoning. My sister in law makes "real" mashed potatoes and then adds in instant mashed potatoes and they were awesome!

Boil, and drain as usual.
Add a fair-sized amount of Cheese-Wiz, some milk, and butter and mash.

Once mashed with as few lumps as possible, stir-in some chives and spice to taste.



Edit: What would I cook for the rest of the meal?
A nice steak (beef / bison / ostrich).
Some brussel sprouts, green beans, or kernel corn.

I love to add grated parmesan cheese, chopped chives and fresh ground black pepper to ordinary mash and serve with crumbed chicken and pork

ok my moms secret.. cook potatoes till tender,rince in cold water, reheat on low. (do not let burn) add your fav. milk. mash as always, add in choped green onions, and grated cheese depending on taste, still well then serve hot, u can also add garlic if you want

mashed potatoes, chives and white cheddar or caramelized onions,and Parmesan, or roasted garlic, and when i have leftover they become patties: mashed potatoes, eggs, flour, Parmesan saute on a pan until brown
