The balsamic would be good because it is sweet, but you would need to make a balsamic reduction by cooking it down to lessen the acidity of the vinegar. Other than that this is a very refined dish and if the balsamic is prepared right will taste good.

you'll want to use a good quality, aged balsamic vinegar and to taste the vinegar in advance. for this use, a reduction would work best. add a small amount of sweetening agent to the vinegar,(1 oz sugar or sweetener, to 8 oz balsamic) and cook down, stirring, until thickened and reduced in volume. add the strawberries, after the reduction is cooled, and allow to sit for several hours, to overnight. serve poured over good quality vanilla ice cream.

Sure, just make your sliced strawberries with balsamic vinegar recipe, then spoon it over a scoop of vanilla ice cream (or butter pecan ice cream is even better!)

Sure have, but the balsamic was a 10 year old pricey one, but after reducing it with some sugar and allowing it to cool and the macerating (macerating is the same as marinating, only with sweet things instead of savory [salty] items) process was about 5 hours to chill sufficiently in the fridge......Served over premium (think: Hagan Daaz Vanilla) ice cream, was absolutely delicious......we also served them with amaratti (those little amaratto flavored Italian cookies).....A showstopper of a dessert, without all the work.....Enjoy!!!

If you have a good grade of balsamic, or a balsamic glaze/reduction, it should be wonderful. I recently made a very refreshing dessert salad with fresh peaches and blueberries, feta cheese and balsamic glaze. It was very tasty.
