If I eliminate all carbs such as potatoes, rice and pasta from meals....what else is there (besides proteins, vegies, dairy etc.)?

Get a book on low carb dieting, you can never eliminate all carbs, you wouldn't want to. Eliminating just the white foods, sugar, flour, pasta, rice, potatoes will make your diet lower carb but it would still have plenty of carbs from things like fruits and veggies and processed meats if you eat them.
A diet like Atkins will start with 20 carbs a day for two weeks but then you increase carbs until you are up at your correct level to keep losing weight. They have list of foods with carb counts you can choose from. Some veggies are higher carb than others like squash is pretty high but leafy greens aren't. Some fruits are lower carb like cantaloupe and berries but others are higher carb like bananas and peaches.

Food is either carb, protein or fat.

If you eliminate one of them then you need to eat the other two.

Dairy, in the form of cheese and milk (in particular) has carbs as do vegetables and nuts. (You are better to go with cream instead of milk.) They do not have as many carbs as pasta, bread, potatoes, etc. but they still have some.

The Atkins site, and other low-carb sites, have lists of food stuffs that are good for low carb diets. The list is mostly fresh meat of all kinds (processed meats like sausage often include sugar) and non-starchy vegetables.

No one knows what an optimal diet looks like and the low carb diets have been shown to provide weight loss and improvements in people with high cholesterol and diabetes. IMO, the most important thing is to eat fresh, eat a variety of things and avoid as many processed foods as possible.

Dairy and veggies both have carbs in them. Veggies have very little calories, but what they do have is mostly or all carbohydrate. A carb-free diet would be extremely difficult to maintain and very unhealthy. The best way to lose weight and KEEP it off is to eat a balanced diet at around 1800 calories with a carb/fat/protein ratio of around 40/10/40%. Avoid sugar also...it takes any excess material that your body can't use and stores it as fat. AND DON'T FORGET TO EXERCISE!!! :)

Plenty.

I am on low carb, low fat, high fibre, high protein and a hour brisk walk 5 times a week, and I have lost 31lbs/14kg and gained better health. I am now maintaining my 108lbs/49kg for more than a year, with more fruits and complex carbs.

Keep in mind that you also need to eliminate fruits, dairy, a lot of vegetables (such as bell peppers, beans and corn), not to mention sweets.

You can eat meat and romaine lettuce.

Don;t eliminate all carbs: they have important b vitamins you need. Find some good carbs: whole wheat, stone ground oatmeal, flax seed, quinoa (Yum!)

.....and why would you want to do that, given that you need carbs for energy production?
