It depends what you're using them for. White potatoes are good for mashed, baked or for soups. They tend to break down alot easier though. If you want them to be whole, like in stews, use the red potatoes, they tend not to break down as easily.

What type of meal Red potatoes with fish! White potatoes for baking. cook them separt from other stuff,sometimes flavor run into one another.
red potatoes are great in stews, white potatoes are great for hashbrowns.
and frying..

Red potatoes seem to be sweeter, better texture, but white is easier/better to cook with, in other ingredients.

red potatoes, unpeeled add nice color to potato salads, whites are better in soups, stews and mashed. Idaho whites are older and best for baking.

White, red potaotes can be a bit waxy, they do not render down as much as the white. I like them both but would choose white pots if I had to.
