Dip the fish in flour to get it dry. Shake off excess. The dry fish helps the wet batter to stick to the fish.
Dip into beaten egg and yellow mustard (1 tsp mustard to 2-3 eggs) batter to wet.
Dip into a mix of half cornmeal and half instant mashed potato flakes and make sure it is covered everywhere. (with your favorite cajun seasonings mixed in to taste)
Deep fry in oil until it the fish floats.
The mix of cornmeal and mashed potato flakes produces a batter that is lighter than just cornmeal and has a good flavor too.

The most important thing is to have a good non-stick pan. Put the pan over a high flame, when it's hot, put some oil in the pan. Gently lay the fish into the pan. If you dust it with some flour, it'll be less likely to stick. Turn the heat to medium. After about 5 minutes, turn it carefully. I like to use tongs. You may need to add some more oil.

The best way I have found to fry fish, is to dip the fish in a egg and milk batter, then coat the fish in cornmeal and fry with grease in the skillet. I have found an electric skillet to fry the fish in works really well.

Easy Fried Fish Fillets
1INGREDIENTS:
1 pound fish fillets, such as haddock, tilapia, cod, etc.
oil for deep frying
1/2 cup flour
salt and pepper to taste
1/4 teaspoon paprika
PREPARATION:
Pour 1 inch of oil in skillet; heat to 375°. Combine flour, salt, pepper, and paprika. Dip fish fillets into flour mixture. Fry fish for about 5 minutes on each side; remove to a platter.

Soak it in a lemon-lime soda pop, then flour it then season it, and fry it on medium heat, in sprayed frying pan. Be sure to have the kitchen fan on, low and stand at the stove until it's done cooking. I would suggest 10 minutes per side.

English style Fish n Chips is my favorite
Ingredients:
1 1/2 lbs. cod fillets, or other favorite fish such as haddock, pollack
6 large potatoes, peeled and cut into "chips"
2 medium eggs, beaten
1 cup all-purpose flour
3/4 cup beer (optional)
3/4 cup milk
3/4 cup white wine
Vegetable oil for deep-frying
1/2 tsp cream of tartar
1/2 tsp baking powder
Salt - to taste
Black or white pepper - to taste
Malt vinegar - to taste
Method:
Combine flour, eggs, beer, milk, wine cream of tartar, salt, and pepper and mix well to make batter; cover and chill about 1 hour.
Heat 2-3" oil in a large pot to 350-375F and add potatoes; cook until just lightly browned, then drain well on paper toweling and keep warm.
Cut Cod Fillets into 3-4" pieces; stir batter to re-mix and dip fish pieces into batter, allowing excess to drip off.
Place into hot oil and fry until golden and just beginning to puff; drain well on paper towels; season fish and chips with salt and pepper to taste.
Serve hot in the traditional English way with malt vinegar.

personally, I mix salt, pepper and some Cayenne pepper in flour or cornmeal mix then flip the fish in it front and back then fry it. That's my easy recipe...
CAJUN CATFISH
3 strips bacon, chopped, 2 garlic cloves,crushed, 2 T. chopped onion,4 T butter, 1 and 1/2 tsp. Dijon mustard, 2 tsp cayenne pepper, 2 tsp Cajun seasoning,1/4 tsp basil leaves,1/4 tsp thyme,1/2 tsp oregano, 5 drops Tabasco sauce, 4 ( 6 to 8 oz each) catfish,crappie,or walleye fillets.
Heat oven to 375 degrees
In cast iron skillet, saute' bacon,garlic and onion over medium heat u til onions are translucent. Add butter, mustard, cayenne, Cajun spice, basil, thyme, oregano and Tabasco,simmer 3 minutes. Add fish; saute' 3 minutes or until brown. Place skillet in oven and bake 20 minutes or until fish flakes easily with a fork. Serve over white rice with johnnycakes

all purpose flour works very well, just moisten your fish allow flour to stick to fish and add to vegetable oil and fry at 325 to 350 degrees for 2-3 minutes.

First Clean the fish up remove the scale.
Second season it with salt
third powder it with flour(amount depends on whether you would wan to pan fried or deep fried)

I bake mine, you can use flour and some seasonings mix in a bag or bowl, heat oil, as deep as you need it to be, place fish in seasonings shake off extra coatings, carefully place in pan with oil. cooking time,.. till brown... then remove and place on paper towels.
