Eating too many carbohydrates at once causes your pancreas to release larger than normal amounts of insulin to regulate your sky-rocketing blood sugar levels. When you consume these types of foods on a regular basis, your pancreas may become over-worked in the long-run and may ultimately fail to function properly. This leads to diabetes.
I believe that soda is one of the main causes of diabetes in this country. Americans consume massive amounts of soda every year. Some consume 7 cans a day or more. No wonder diabetes is so prevalent in our society.

Any starch or sugar does turn into glucose. If your body is not very good at using insulin to process that glucose (insulin- resistant) you could end up with diabetes or the symptoms that diabetes is on the way (pre-diabetic state).
The main thing that doctors warn against is not about eating a hamburger bun (with its starch that turns to sugar) but instead against eating a big wedge of frosted birthday cake (with its concentrated carbohydrates). That is what can put you over the edge.
