I wasn't quite certain if either of these recipes were the one you wanted, so I am submitting both.

See You Gai (Red Cooked Chicken)

3-1/2 lb Roasting chicken
1-1/2 c. Cold water
1-1/2 c. Dark soy sauce
1/4 c. Chinese wine or dry sherry
2 Inch piece fresh ginger, peeled and sliced
1 Clove garlic
10 Sections star anise
1-1/2 tbsp. Sugar
2 tsp. Sesame oil

Wash chicken well. Choose a saucepan that you will chicken be able to cover as much of the chicken as possible. with the soy liquid. Put chicken into saucepan, breast down, and then add all the ingredients except the sesame oil. Bring slowly to a boil. Reduce heat. Cover and simmer on low for 15 minutes. Turn chicken over and recover with the lid. Simmer 20 minutes, basting the breast with liquid every 5 minutes. Remove from heat and leave covered in until cool. Lift chicken out of sauce, put on a serving platter and brush with sesame oil. With a sharp knife, cut in two pieces (lengthways.) Serve at room temperature with some of the cooking liquid as a dipping sauce. Serve with rice. Makes 4-5 servings.

Pad See You

8 ounces meat of your choice (beef, chicken, pork, or seafood)
8 ounces noodles of your choice (normally fresh rice noodles are used)
1 tablespoon fish sauce
1 tablespoon palm sugar (or substitute regular sugar)
1 tablespoon oyster sauce
3 tablespoons soy sauce
1 cup broccoli cut

Additional Ingredients for marinade of meat
1 egg
2 to 3 cloves garlic, crushed
1 tablespoon oyster sauce
1 tablespoon cornstarch
1 tablespoon rice wine
1 tablespoon palm sugar
1 tablespoon sesame oil
1 teaspoon black pepper

Slice the meat into bite-size pieces then marinade it in recipe described above for 1 hour.

Prepare your noodles. If they are fresh, you do not need to do anything, but if you are using dry noodles, you will need to soak them in water for 15 or so minutes until they are soft.

You will need a medium to large sized skillet. Grease the skillet with the oil of your choice, and then cook the meat until it is almost done. Then add in the rest of the ingredients, and stir-fry for about 2 minutes.
