Or is it the lunch meats?
Try taking crackers and cheese, cut up fruit, energy bars, trail mix, jerky, and plenty of water.

Skip the lunchmeat and make an avocado/tomato/cheese sandwich! Those are delicious :) You can make veggie sandwiches out of lots of different things, roasted red peppers, roasted eggplant, onion, flavored cream cheese,etc... or you can do a tortilla rollup with salsa and cheddar cheese heated through so it stays rolled up. Some other options are hummous and chips or a bean dip and chips, containers of yogurt, granola bars, fruit, nuts. There's always cucumber and cream cheese sandwiches too.. Those are yummy with some salt and dill added.

Cheese and tomato sandwichs on whole wheat with butter.
Have you tried just plain sliced turkey breast or roast beef, if you can eat turkey or roast beef with no problem you should be able to manage them. Is it possible its the bread that bothers you? if so switch to rolling the turkey or beef up in a lettuce leaf.
Delis have plain meats like the turkey or RB sliced, stay away from the chicken roll or other spiced or salty meats like pastrami or corned beef.

You can buy tuna that already has the mayo and relish in packs and just stir it up - you can put it on bread or eat it with the crackers it comes with.
Very fast and easy. You can just take down to the beach with you and fix it there.

How about starting with a visit to your local alergy doctor to see just what foods are on the 'upset my stomach' list, then approach your lunches, etc. from that angle.

Well, i think you should visit a dietologist, or at least your family's doc and find out why you cannot digest some kinds of food. He will also help u build a daily diet suitable for u, and you will stop having problems..

skip the sandwich... just fruit, some crackers.. nothing that has to be kept cold.. like meat or fish or creams..
apples, bananas, crackers, chips...
