When I go camping I take liquid eggs, dried onions, dried green pepper, soy milk, bagels, dried bacon bits, lunch meat. I place everything in zip lock bags. Do not take white bread because it spoils and is too delicate, that's why I use bagels. I also dice potatoes, add onions, a little butter, s/p. Then put in foil and cook on the campfire till done. I also make salt/pepper by combining both and placing in a small container like a shaker. I have made pizzas on a flat hot rock. Also take packets of Folgers coffee. They are like tea bags and are in foil packages. Get the small packs of sugar and creamer too. These are great for camping. Place a heavy plastic trash bag in your cooler, add your food inside the bag with some ice. Around the bag place more ice and a little water. It will keep your food colder longer. And always, at night before going to bed, put your food in your car or in a plastic storage container. Otherwise you will be getting visitors of the furry kind.

for breakfast fry up some new potatoes with sausage and scrambled eggs for a scrambled mess. you can use some of the new potatos for dinner the previous night.
I always think chili goes well at camp sites too, no matter how hot it gets.. its a good flavorful, spicy meal to finish off the day.
For dessert ;
campfire upside down cake
INGREDIENTS:
12 cake donuts
1 1/4 cups brown sugar
1 1/4 sticks butter, softened
12 pineapple rings
PREPARATION:
Slather butter on donuts. Pack on brown sugar. Top with pineapple. Seal tightly in foil packet, and cook on coals for 5 minutes.

I like things that take very little prep or can be prepped ahead of time. Also, things that are easy to clean up or use only one pot/pan to cook are good. When I camp, it's almost always backpacking, so food is simple and light. With the camping you're doing, you ought to be able to cook just about anything.
If you'll have a grill or campfire, anything that can go on a stick, like a shish kebab, is a great idea. You can make them up ahead of time, complete on a skewer, or just bring along the cut-up pieces and skewer when ready.
Try these links, see if anything floats your boat.

I like stretching out some canned biscuit dough on a stick, into a cylinder shape and cooking it over the fire until golden brown. Then Spray with spray butter and sprinkle with cinnamon sugar. Its great as dessert or a few for breakfast.

In the morning after breakfast, let your campfire die down. Take a cast iron skillet-put a roast, potatoes, carrots, onions, garlic, etc. add water. Put on the hot coals. Now, go fishing, hiking whatever and come home to dinner. Have fun!

Type "dutch oven camping recipes" into yahoo.
Eating well was always the best part of camping for me.
If you don't have a dutch oven, go to wal-mart and get one. You can make just about anything in one, even biscuits.
