of white grapes? recently I purchased a very expensive bottle of white balsamic vinegar. It is sweet and delicate with a fruity taste. The only ingredients are aged white vinegar and must of white grapes.

Must is the juice of freshly pressed grapes, that contains various quantities of pulp, skins, stems, and seeds, called pomace or grape solids, which typically comprise between 7–23 percent of the total weight of the must. These components, and the time they are allowed to be in contact with the juice, are critical to the final character of the wine.

I looked up in wikipedia... learn something new everyday. Can't say that I've ever read the ingredients to vinegar... just assumed it was made from grapes and tastes good.
