I bought a roast to make for dinner tonight. do you have any good ideas? I want something different. Thanks a bunch..

The tomatoes in this recipe give the pot roast a different flavor.

Pot Roast With Vegetables and Pot Roast Gravy

2 tbls. flour
1 tsp. salt
1 bottom round beef roast (approximately 5 lb.)
1 tbls. shortening
6 whole black peppers
1 bay leaf
6 medium carrots, pared
6 medium onions, peeled
1 16 oz. can stewed tomatoes
Mashed potatoes

Wipe roast well with damp paper towels. Combine flour and salt; rub into surface of meat. In large Dutch oven, heat shortening , brown meat on all sides. Add black peppers, bay leaf, 2 cups water and simmer covered for 1 hour. Turn roast. Add vegetables; simmer covered for 45 minutes to1 hour or until the roast and vegetables are tender. Keep warm. Serve over mashed potatoes with Pot Roast Gravy. (See recipe below.)

Pot Roast Gravy

Pan drippings
1/4 cup flour
Salt and pepper

Brown flour in pan drippings in skillet; when brown add 2-1/2 cups water to liquid to make of gravy. Cook slowly until thick. Season to taste. Serve hot over pot roast and mashed potatoes.

Cut the roast into chunks (depending on how many people you are feeding)...Place each chunk of roast on a piece of aluminum foil with diced pieces of potatoe, carrots, onions, cherry tomatoes, etc, a tab of butter, salt and pepper. Wrap up and cook at 375 for about an hour (check to make sure done). This gives everyone an individual meal. It's just a neat way to do it.

I always do my roast in the crockpot using my grandmother's recipe......

Take roast, rinse well & place in bottom of crockpot. Add cut up potatos, carrots & onions. Over top, add 1 pkg lipton onion soup mix, 1 can cream of mushroom soup, 1 soup can of water, minced garlic, salt & pepper and 1 stick butter. Cook on low for about 8 hours - meat will fall apart when done.......I like to serve with fresh coleslaw & homemade cornbread.........Don't forget the sweet tea!!

Ummm roast potatoes with lots of different herbs. Cook them slowly in a bit of olive oil and add paprika, chilli powder, oregano and any other herbs and spices you facny! They turn out delicious.
Also why not try stir-frying some brocoli, its diffeent and alot tastier than boiled.

peanuts,potatoes,onion and u can make a wonderful mixveg by doing this.
